Lemon Caesar Salad is a simple and classic caesar salad recipe with a refreshing, homemade lemon caesar dressing. Serve as a side salad or add grilled chicken to make it an entree!

I really like Caesar Salad. Probably mostly because I’m a bit of a picky eater and Caesar salads are usually pretty plain. Many Caesar dressing recipes call for eggs, but this one just has a few basic ingredients that are so easy to whisk together. I love the addition of the lemon to the dressing – it adds the most amazing flavor!

Add the dressing to the salad and serve immediately, or make the dressing in advance and store in the refrigerator. If I make the salad just for myself, I can eat it all week long!

Ingredients in Lemon Caesar Salad
Romaine lettuce – Use one head of lettuce, make sure to wash and pat dry before tearing up into bite-sized pieces.
Onion – Red onion works the best and I usually use about half of the onion. Is best in really thin slices.
Tomatoes – You can either use diced Roma tomatoes OR cherry tomatoes (whole or halved).
Parmesan – You can’t have a Caesar salad without fresh Parmesan! Use as much as you’d like!
Croutons – Use your favorite variety and add as many as you want!
Salt and pepper to taste
Grilled chicken strips (optional) – I always like to add chicken if I’m serving this as a main course. I love to buy frozen grilled chicken strips and keep them on hand so that I can heat up a few and add them to salads. The blackened grilled chicken strips from Costco are my favorite. You can also make your own grilled chicken if you prefer!
Lemon Caesar Dressing:
1 garlic clove, minced
1-2 Tbsp lemon juice
1-2 tsp Dijon mustard
1/4 cup extra virgin olive oil
salt and pepper to taste

Lemon Caesar Salad
Ingredients
- 1 head Romaine
- 1/2 red onion very thinly sliced
- cubed Roma tomatoes OR cherry tomatoes
- 1/4-1/2 cup freshly grated Parmesan
- croutons
- salt and pepper to taste
- grilled chicken strips
Lemon Caesar Dressing:
- 1 garlic clove minced
- 1-2 Tbsp lemon juice
- 1-2 tsp Dijon mustard
- 1/4 cup extra virgin olive oil
- salt and pepper to taste
Instructions
- Mix all dressing ingredients together with a small whisk or a fork and store in the refrigerator until ready to serve.
- Wash and chop romaine and place in salad bowl. Add sliced onion and tomatoes. Add croutons. Pour some dressing over salad and lightly toss. Add Parmesan cheese and a little bit of salt and pepper. Add remaining dressing (if desired) and toss again. Add slices of grilled chicken if desired.
