Easy Pineapple Cake is made from scratch with just a few simple ingredients. The can of crushed pineapple is where most of the liquid for the cake comes from, so you don’t need to add any additional oil. Which makes this cake pretty healthy, right? Ok, so maybe it can’t be considered a healthy food, but using pineapple juice instead of oil does save you a few calories. And the pineapple makes the cake so moist – it’s absolutely amazing!

It only takes a few minutes to mix the cake, and the simple cream cheese frosting can be made right after the cake comes out of the oven. Frost the cake while still a little bit warm and it spreads so easily. The cream cheese frosting pairs so well with the flavor of the cake!
What is pineapple cake?
Pineapple cake is made from scratch with simple ingredients (eggs, flour, sugar, brown sugar, and baking soda) with a can of crushed pineapple mixed into the batter. The recipe is straightforward, but the pineapple in the cake adds so much flavor and makes the cake very moist. The cake is delicious on its own, but the cream cheese frosting pairs so well with it…so don’t skip it!
Ingredients in Easy Pineapple Cake
Eggs – Two large eggs bind all of the other ingredients together.
Crushed pineapple – You will need a 20-ounce can of crushed pineapple. DO NOT DRAIN the can before adding it to the other ingredients. The moisture in the crushed pineapple provides most of the liquid for the cake batter.
Flour – All-purpose flour works best, but cake flour works well too.
Sugars – You will need a cup each of white sugar and brown sugar. For best results, make sure the brown sugar is fresh and moist.
Baking soda – This is the leavening agent in the cake. For best results, make sure the baking soda isn’t old or expired.
Cream Cheese Frosting
Cream cheese – You can use any variety of cream cheese for the frosting. Non-fat, low-fat, or regular cream cheese all work well. Make sure the cream cheese is softened to room temperature before adding to the other ingredients.
Butter – Real butter works best. The butter needs to be softened to room temperature before mixing with the other ingredients.
Vanilla – A little bit of vanilla extract adds a little bit of delicious flavor to the frosting. The higher the quality of the vanilla, the better.
Powdered sugar – This is the base of the frosting and makes it sweet and smooth!
How to make Easy Pineapple Cake
Use an electric mixer to beat the eggs in a large mixing bowl for 2-3 minutes.
Add pineapple, flour, sugars, and baking soda.
Pour into a greased 9X13 pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean.
As soon as the cake comes out of the oven, you can make the frosting.
Beat the cream cheese, butter, and vanilla together until smooth.
Add the powdered sugar and continue to beat until completely smooth.
Frost the cake while still warm (just make sure to wait about 8-10 minutes after the cake comes out of the oven so it’s not hot enough to completely melt the frosting, just warm enough to soften it so that it spreads easily).

HOW DO YOU SOFTEN CREAM CHEESE?
Cream cheese is easy to soften – you can set it out at room temperature or soften it more quickly in the microwave.
-To soften at room temperature more quickly, just set the cream cheese on a plate and cut it into smaller pieces. The cream cheese should reach room temperature in about 15-20 minutes with this method.
-To soften the cream cheese in the microwave, remove the foil packaging and set the cream cheese in a small bowl or on a plate. Microwave for about 10-15 seconds. If the cream cheese is still cold and hard, continue to microwave for about 5 seconds at a time until the cream cheese is soft throughout. Just make sure not to microwave it too long or it will start to melt!

I have been making this recipe for over 30 years, usually for large parties. Everyone loves this cake and always asks for the recipe. My recipe has an optional ingredient, chopped walnuts. I’ve also used chopped pecans for a sweeter flavor.

I’ve never tried to make this without eggs, but there are a lot of egg replacements you could try. Applesauce, banana, flax seed…if you google egg replacements, there are a lot of ideas. Let us know if you find one that works well in this cake!

This recipe needs 1tsp of pineapple extract to give it flavor. It is very rich, however rather tasteless with only the 20 oz. can of pineapple. Add the extract and you have a 5 Star cake!!!

This cake is delicious. It doesn’t need frosting which is great because I can’t have animal fats, so no cream cheese. I used coconut sugar instead of brown sugar. Yummy! No fats in this was a good choice for me. I love it!
