For the Cake, You Will Need:
-Granulated sugar- You will need 1 ½ cups of sugar for this recipe, it will provide just the right amount of sweetness.
-Eggs: Grab 6 large eggs from the refrigerator to whip this cake up! These will help with the richness of taste as well as the binding.
-Flour: You need 1 ½ cups all-purpose flour for the base of the cake batter.
-Vanilla: 2 teaspoons of vanilla are called for in the recipe, but feel free to add a little extra if you like it a bit stronger. Using high-quality vanilla would also give a stronger flavor.

Prep
Preheat your oven to 350F degrees and grease a cake pan (Bundt or any kind you have) and dust the inside with flour. Set aside.
Make batter

Make glaze
Place all of the almond glaze ingredients in a bowl, the melted butter, almond extract, powdered sugar and milk and whisk until smooth.
Pour over the top of the cooled cake and then top with fresh berries.

I think this cake bakes better in a bundt. I’ve also halved it and made it in a loaf pan, then sliced it and topped with berries.

I made it with 2 eggs and a cup of Egg Beaters. I think this was a bad idea as it came out very dense and hard and quite difficult to cut.

I’m sorry this didn’t turn out for you! Egg Beaters have nearly all of the yolks removed- they are actually 99% egg whites so it makes sense that the cake wouldn’t turn out quite the same as using regular eggs as the recipe requires. Try it again with all real eggs and I think you’ll find the results to be much tastier!

I wanted to make a cake but didn’t have any butter. Found this recipe. Gave it a shot and it came out great. I made a half batch, because I only had three eggs, and cooked it in a glass bread pan. Took about 40 minutes at 350 to have a toothpick come out clean but it turned out an amazing cake. Eating it plain is great. Its light, airy, and the crust has that perfect kind of sugary crunch to it that goes great with the soft center. Definatly going to make this again and again.

If using a kitchenaid mixer, which attachment (and what speed) should I use? The whisk or the paddle? Or does a handheld electric mixer work better for this cake? I imagine the type of mixer will change the fluffiness of the batter and affect the outcome.

I always use a KitchenAid whisk attachment when I make a cake. Mixing speed is around a 5- medium and of course, mix for the full 8 minutes. I’ve used a hand help electric mixer too and it works beautifully!

I halved the recipe and followed the measurements exactly as they were in the recipe notes unfortunately the cake did not turn out well. It was very close textured and dense. Just wanted to let you know the recipe may not work when halved. Next time I’ll try the full measurements.

Super easy, only four ingredients! I had not ever made a cake without butter or oil before this one, and I was sceptical. It came out like a mix of a regular cake and angel food cake. The batter tasted like a milkshake, very rich. When plain, the cake had the flavor of a fortune cookie! I added the almond glaze the recipe recommended, but did not have any fresh fruit. I love almond, but I would half the almond flavor next time and also add almond slices. I think a lemon glaze would have been good with fruit or without.
