Tips for making Perfectly Smooth Chocolate Pudding
- Keep Stirring the Entire Time – This pudding needs to be stirred constantly while cooking to keep the cocoa and cornstarch evenly incorporated and to prevent the mixture from scorching or forming lumps on the bottom of the pan.
- Don’t Worry About the Early Texture Changes – During the first several minutes the mixture may feel thick or slightly fluffy, then it will loosen and look more like hot chocolate before it finally thickens into pudding—this is completely normal, so just keep stirring and trust the process.
- Add the Chocolate Chips Off the Heat – Stir the chocolate chips in after removing the pan from the heat and let them sit for a minute before whisking so they melt smoothly into the pudding without overheating.
How long is this homemade chocolate pudding good for?
Homemade chocolate pudding will keep well in the refrigerator for about 4–5 days when stored in an airtight container. For best texture, you can place a piece of plastic wrap directly on the surface of the pudding before sealing the container to prevent a skin from forming.

Can you freeze it?
Freezing is not recommended for this pudding. Because it’s thickened with cornstarch and made with milk, freezing and thawing can cause the texture to become grainy and watery, which takes away from the smooth, creamy consistency that makes this recipe so good.

Easy Homemade Chocolate Pudding
Ingredients
- 1 cup granulated sugar
- ½ cup cocoa powder
- ¼ cup cornstarch
- ¼ tsp salt
- 2 ½ cups whole milk
- ¼ cup semi sweet chocolate chips
- 1 tsp vanilla extract
- ¼ tsp almond extract
Instructions
- Start by whisking together all of the dry ingredients in your saucepan.
- Stir in the milk and cook on medium heat, stirring constantly, until it starts to boil and thicken, about 15 minutes. (The mixture may feel slightly thick, or even fluffy, for the first 5 or so minutes it’s being cooked, it is not done at this point. It will then turn into a smooth liquid, like hot chocolate, before it starts to truly thicken to a pudding consistency. Simply keep stirring and trust the process.)
- Remove from the heat. Gently stir in chocolate chips. Let sit for a few minutes to melt, then slowly whisk again.
- Let the mixture cool for a few minutes, then stir in the vanilla and almond extracts. Enjoy warm, or place in the fridge to enjoy it cold!

Do I really have to stir the pudding constantly?
Yes, or as constantly as you are able to. If you need to stop for a few seconds, or up to 30-60 seconds, once in awhile, it should still be fine, but it should not be left unattended or allowed to boil excessively.
Can I make this another flavor?
This pudding recipe has only been tested with chocolate pudding and using cocoa powder.

Why isn’t my pudding thickening?
It usually just needs more time. The mixture goes through a few texture changes while cooking and often doesn’t start thickening until it reaches a gentle boil, which can take around 15 minutes of constant stirring.
Can I use a different type of milk?
Whole milk works best because it creates the richest, creamiest texture. Lower-fat milks may work, but the pudding may turn out a bit thinner and less creamy.
Why does my pudding have lumps?
Lumps usually happen if the pudding isn’t stirred constantly or if the heat is too high. Whisking continuously over medium heat helps keep the mixture smooth as it thickens.
Can I serve this pudding warm or does it have to be chilled?

Very easy to make. Keep stirring and all of a sudden, it comes together. I’d leave out the almond extract the next time. I followed the directions and still found the almond extract to be too overpowering of a flavor.
