Slow Cooker meals are my favorite because I can do all the prep work in the morning and have dinner magically ready to eat later in the day! The hour before dinner is one of my busiest times and I usually spend most of it in the car, which makes it pretty tricky to prepare a meal at dinner time!
SLOW COOKER CHICKEN TACOS
Add chicken breasts, salsa, sour cream, corn, and black beans to a crockpot and cook on low for 5 hours. Shred the chicken and then put the mixture in tortillas with all of your favorite toppings. You can also serve the chicken over rice or on top of a salad, or turn it into nachos…the possibilities are endless!

INGREDIENTS IN CROCKPOT SALSA CHICKEN TACOS
Chicken – You will need 4 boneless, skinless chicken breasts. The chicken breasts can be substituted with boneless, skinless chicken thighs or even chicken tenders if you are short on time and need the chicken to cook more quickly.
Salsa – Sixteen ounces of salsa adds most of the flavor to the recipe. You can use any type of salsa that you want. If you prefer things on the spicy side, use hot salsa or keep things on the mild side with a mild salsa.
Sour cream – Adding eight ounces of sour cream to the chicken mixture makes it so creamy. You can swap this out with plain Greek yogurt if you’d like.
Corn – You will need to drain a can of corn before adding to the other ingredients.
Black beans – You can swap out the black beans with pinto beans or kidney beans if you prefer. Just make sure to rinse and drain the beans before adding to the other ingredients.
Optional toppings – grated cheese, sour cream, chopped avocados, guacamole, etc.

HOW TO MAKE CROCKPOT SALSA CHICKEN TACOS

Cook chicken and salsa in a crockpot for 5 hours on low.
Shred chicken with 2 forks.

Add sour cream, corn, and black beans, and cook for one more hour.
Serve chicken in tortillas and top with grated cheese, sour cream, chopped avocados, guacamole, etc.

CAN YOU MAKE CHICKEN TACOS IN AN INSTANT POT?
Yes, you can make chicken in an instant pot! It’s quite a bit faster than using a Slow Cooker and the chicken is fall-apart tender and so flavorful! Instant Pot instructions are included below- I’ve even made it in my baby 3-qt Instant Pot with great success!
HOW TO MAKE CHICKEN TACOS IN AN INSTANT POT
Set your Instant Pot to Saute so that the pot begins heating up while you gather the ingredients. Add the chicken and salsa to your Instant Pot. Push “cancel” then “Pressure Cook” and set the timer to 15 minutes. Toggle the pressure release to “sealing.” It will take about 20 minutes to come to pressure. After cooking, I always let the chicken Natural Pressure Release (NPR) because I think the consistency is better. The full process in the IP takes about 40 minutes.
Remove the chicken breasts from the Instant Pot and shred them with a fork. Return the chicken to the Instant Pot and add the other ingredients. Stir it all together and serve immediately.

SOME OF OUR FAVORITE WAYS TO EAT CHICKEN TACOS:
- Burritos and tacos – Fill a tortilla with some of the chicken and add a little bit of cheese, some beans, rice, and maybe some lettuce and tomato. Add some cilantro lime dressing for even more flavor (recipe found below).
- In a salad – This chicken is delicious on top of a bed of lettuce and then you can add some sliced avocado, tomatoes, black beans, etc. Perfect if you’re cutting carbs or if you have gluten sensitivities.
- In a bowl – Fill up a bowl with some rice and add the chicken on top.
- Plain! There is so much flavor in the chicken that you can just serve it as-is for your entree! Add a slice of French bread and some fresh fruits and/or veggies on the side and you’ve got a complete meal!

How should I store the leftover chicken?
Leftover shredded chicken can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
