Turn out the dough onto a floured surface and knead for about 5 minutes, until smooth.

Now oil a bowl and place the dough inside. Cover it with plastic wrap and let rise for an hour, until it has doubled in size.

4 tsp KOSHER salt… if you want to use regular salt, decrease it to 2 tsp, which is appropriate for a roll recipe with 6+ cups flour.
