Ingredients for Copycat Costco Pumpkin Pie
Buttery Pie Crust
Butter: You will need 1 cup of cold salted butter (2 sticks) to help bind the crust ingredients together well.
Flour: The base of the crust is 2 ½ cups of all-purpose flour.
Sugar: Add in 1 TBSP of sugar for a subtle sweet taste.
Water: Give the crust moisture by using ½ cup of cold water.
Pumpkin Filling
Pumpkin: Use 22.5-ounces of Libby’s Pure Pumpkin (this is one full 15-oz can and a half of a 15-oz can). You can use any pure pumpkin you like but Costco does use a puree that uses the same kind of pumpkin Libby’s uses.
Vanilla extract: Enhance all the incredible flavors in this recipe by adding 3 tsp of vanilla extract.
Pumpkin pie spice: For more delicious taste, you need 3 tsp of pumpkin pie spice. You can use cinnamon instead of the pumpkin pie spice if that is what you have on hand.
Heavy cream: 1 ½ cup of heavy cream will make the filling rich and creamy.
Evaporated milk: You will need ¾ cup of evaporated milk to add richness and help thicken the pie filling.
Eggs: Add in 5 eggs to the filling for the perfect pie texture and taste.
Brown sugar: Using 1 cup of brown sugar will add a wonderful depth of flavor to the filling.
Sugar: Sweeten the filling a bit more by adding 6 TBSP of granulated sugar.

Step by step on how to make Pumpkin Pie
Prep
Get started by preheating the oven to 350°F.
Pie crust
In a large bowl stir together flour and sugar. Then grate in the cold butter and combine with a fork until pea size crumbs form. Proceed to pour in the cold water and knead the dough until it forms into a ball.
Now roll out the dough until it’s ¼” thick and gently place into a 12-inch pie pan. Trim off any extra dough and crimp the edges with a fork.
Bake
Place the crust in the preheated oven and blind bake it by placing parchment paper on the crust, filling it with dried beans or pie weights and baking for 20 minutes. Remove the crust from the oven and set aside to cool.
Pumpkin filling
Next mix together the pumpkin, vanilla extract, pumpkin pie spice, heavy cream, evaporated milk, eggs, brown sugar, and granulated sugar in a large bowl using a hand mixer, until smooth.
Pour the filling into the crust and place bake in the preheated oven to bake for 55-60 minutes, or until the middle is just slightly not set. Remove from the oven to cool.
Once the pie is cool, place in the refrigerator to chill for at least 2 hours. Slice, serve with whipped cream, and enjoy!
