- 18 oz jar chunky peanut butter
- ⅓ cup milk
- 10 large marshmallows
- 2 cups powdered sugar
Instructions
- Prep: Preheat the oven to 350°F. Grease a 15×10 baking pan with butter or non-stick cooking spray.
- Brownie batter: In a saucepan, melt 1 cup butter; stir in ½ cup cocoa & whisk until smooth. Remove the pan from the heat.
- In mixing bowl, combine the eggs, sugar, and vanilla extract; beat the mixture for 1 minute. In a separate bowl, combine the flour and salt; gradually add the flour mixture to the egg mixture. Then beat in the cocoa mixture; mix well.
- Pour the batter into the prepared baking pan and bake for 18-22 minutes or until a toothpick inserted near the center comes out clean. Place the pan on a wire rack to cool.
- Peanut butter topping: Place peanut butter in a microwave-safe bowl & heat uncovered, at 50% power for 2 minutes, stirring once. Stir until the peanut butter is smooth, then spread it over the warm brownies. Place the pan in the refrigerator for 45 minutes or until peanut butter is set.
- Marshmallow icing: Place the remaining ¼ cup cocoa powder in a heavy saucepan. Stir in the 1/3 cup milk until smooth; add the marshmallows and remaining 1/2 cup butter. Cook and whisk gently over medium heat until butter and marshmallows are melted and mixture is smooth. Remove from the heat and whisk in powdered sugar. Spread over peanut butter layer. Refrigerate for at least 30 minutes. Cut into squares, serve, and enjoy!
