With little effort, and a long wait time you end up with a loaf of fabulously crusty bread with soft insides and chocolate flavor that is perfect for snacking. Serve it up with butter, or cream cheese, and fruit. Every bite is delicious and makes you want to go back for another.
What is artisan bread?
Artisan bread is the term given to crusty no-knead bread recipes such as this. With just mixing the ingredients together to form a dough and then letting it rest for a few hours or overnight you end up with a perfectly risen loaf of dough. Bake in the oven and you’ll get a thick crusted golden colored loaf of awesome bread packed with a softer crumb inside. These breads are perfect for spreads, snacking, appetizers, and more.
Chocolate artisan bread ingredients
-Flour: The base of our bread dough is 2 1/2 cups of all-purpose flour.
-Yeast: We will need 2 teaspoons of yeast for this bread recipe. This is about the amount found inside a single packet of yeast.
-Cocoa powder: 2 tablespoons of cocoa powder in the bread dough will give s a brown color and chocolate flavor in every bite.
-Sugar: We will need 2-3 tablespoons of granulated sugar to help activate and feed the yeast so that our bread rises beautifully.
-Salt: A teaspoon of salt will help to enhance the flavors in this dough perfectly.
-Water: We will need 1 1/2 cups of room temperature water to help activate the yeast and get this bread to form together.
-Olive oil: We need 1 tablespoon of olive oil for the fat in the bread and a little more to help keep our dough from sticking.
-Walnuts: With 1/2 cup of toasted walnuts we can add a nice buttery textured crunch and earthier flavor to the bread.
-Dark chocolate: We want 1/2 cup of chopped dark chocolate to go into the bread so that there’s a nice bite of bitter-sweet chocolate in every slice.
How to make chocolate artisan bread
In a bowl, whisk together the flour, yeast, cocoa powder, and salt.
Add in the sugar.
Slowly add in the water and oil while stirring with a wooden spoon.
Stir in the chopped chocolate and the walnuts, the dough will be very moist.
Place the dough into a lightly oiled bowl and then cover the top with plastic wrap.
Let the dough rest at room temperature for 12 hours.
Preheat your oven and dutch oven or cast iron pot to 425 degrees F.
Dust the ball of dough with a little flour and then fold it onto itself several times.
Turn the dough so that the smooth side is on top, then place it onto a piece of floured parchment paper.
Carefully lower the parchment paper and dough into the hot dutch oven. Place the lid on.
Cook in the oven for 30 minutes.
Remove the lid from the pot and then cook for another 30 minutes.
Remove the parchment paper and dough from the pot and allow it to cool.
Slice and serve. Enjoy!

- 1 tbsp olive oil
- ½ cup toasted walnuts
- ½ cup chopped dark chocolate
Instructions
- Whisk the flour, yeast, cocoa powder & salt together. Add in 2-3 TBSP sugar, if desired. Slowly add in the water and oil while stirring with a wooden spoon.
- Stir in the chocolate and walnuts. The dough will be very moist.
- Place the dough in a lightly oiled bowl and cover with plastic wrap.
- Let the dough rise at room temperature for 12 hours.
- Preheat your oven with a dutch oven or cast iron pot inside to 425 F.
- Dust the dough with flour and fold it onto itself several times. Turn the dough so a smooth side is on top, then place on a piece of floured parchment paper.
- Carefully lower the parchment & dough into the hot dutch oven and put the lid on. Cook for 30 minutes.
- Remove the lid and cook for 30 more minutes.
- Remove parchment & dough from pot. Let cool, then slice & serve.

Is chocolate artisan bread dairy-free?
If you opt for a non-dairy dark chocolate then yes, this recipe should be dairy free.
How to make artisan bread without a dutch oven
If you don’t have a dutch oven then you can use a cake pie or pie plate about 8-9 inches in width. Then when you go to bake the bread have it on the middle shelf in the oven while a pan of water sits on the lower rack off to the side to help create steam in the oven as the bread bakes.

Does it really have to rise 12 hours? I started mine around noon and I didn’t realize it was a12 hour rise! I don’t really want to stay awake until 1.

You can cut the rise time short but it might be more dense.
