Chipotle Deviled Eggs
These spicy deviled eggs have become a go-to snack for our family on game days. We love having a variety of finger foods to enjoy and these do not disappoint! For a family my size I typically triple this recipe to ensure we all have a few eggs to nibble on. And I’m always looking for ways to simplify recipes, so using store-bought hard boiled eggs not only saves time, but ensures perfectly cooked yolks too!
Recipe Notes
- You can buy hard boiled eggs from the grocery store or make your own. It’s up to you. I love buying them already hard boiled from Costco; they make great snacks and my family is known to request deviled eggs at the last minute, so they’re super handy!
- Chipotle Chilis are pretty dang spicy! Try them first, especially if you’re sensitive to heat. You don’t actually have to put in ANY of the chilies, you can just put in some of the adobo sauce instead. It still adds great flavor but much less heat.
- Deviled eggs can be made ahead of time! I usually made them the morning of when I plan to serve them. Just be sure you have space for a platter in the fridge!

Chipotle Deviled Eggs Ingredients
Eggs: You will need 8 hard boiled eggs for this recipe. Using store bought hard boiled eggs is a great way to save time and the yolks are always perfectly yellow.
Mayonnaise: Add ¼ cup of mayonnaise for a creamy filling.
Lemon juice: Use ½ tsp of lemon juice in the mixture.
Onions: 2 green onions, sliced thin, adds color and flavor too!
Chipotle chilis: For a kick of spice you need 1-3 tsp of finely chopped chipotle chilis in adobo sauce*.
Salt & pepper: Add in salt and pepper to your desired taste, start with a little and taste test as you make your filling.
Paprika: Sprinkling the eggs with smoked Paprika is the best finishing touch for this dish.
Tips for Making Chipotle Deviled Eggs
- Be sure you slice the hard boiled eggs in half lengthwise, so that you have 2 longer halves with a round, shallow indent. Years and years ago I accidently cut them in half the other way and let me tell you, they do not sit well! They were like humpty dumpty eggs all topsy turvy on the platter!
- One tip for creamier filling is to really crumble the egg yolks with a fork before adding anything to them. My sister in law taught me that and it really does make a difference!!
- Don’t skip the Smoked Paprika at the end! Paprika does not add any heat, just flavor and the smoky seasoning just pairs beautifully with the mild, creamy eggs.

Chipotle Deviled Eggs remain fresh for up to 5 days when stored properly. They should be placed in an airtight container in the refrigerator to maintain their quality.

Chipotle Deviled Eggs Recipe
Ingredients
- 8 hard boiled eggs use store bought to save time
- ¼ cup mayonnaise
- ½ tsp lemon juice
- 2 green onions sliced thin
- 1-3 tsp finely chopped chipotle chilis in adobo sauce*
- salt & pepper to taste
- smoked Paprika for topping
Instructions
- Prep: Chop the green onions and chipotle chilis. *Note on Using Chipotle Chilis: They're spicy! Taste them before adding them to your filling. If you're sensitive to spice, you don't have to use ANY of the chilis, you can just use the sauce they came in! It adds a lovely smoky flavor and just a bit of heat but makes the eggs still palatable to most people.
- You also need the eggs hard boiled. I like to use store-bought hard-boiled eggs to save time. The yolks are perfectly yellow, and it cuts the process of making deviled eggs into a fraction of the time! You can also try our oven hard-boiled egg recipe.
- Filling: Peel the hard-boiled eggs, slice them lengthwise in half and transfer the yolks to a bowl. Place the egg white shells on a serving platter and set them aside.
- Crumble the egg yolks as finely as you can using a fork. Add in the mayo, lemon juice, half the green onions, chipotle chilis, salt, and pepper. Stir well to combine, then taste and adjust seasonings as needed. (Some like a bite more mayo, others more pepper, etc.)
- Assemble: Using a small 1 TBSP cookie scoop, scoop the egg filling into each egg white. Top each egg with some of the remaining onions and a sprinkling of smoked paprika. Serve immediately and enjoy!
