Tender chicken grilled with pineapple, bacon & slathered with your favorite BBQ sauce.The kids are out of school in a matter of weeks and we have two subsequent days this week where it will be at least 80 degrees. You know what that means, right?! Summer is almost here! It’s a fun time of year and I always find myself craving those flavorful summer meals. I love everything about these BBQ Chicken Bacon Pineapple Kabobs- the tangy pineapple paired with the smoky bacon and tender chicken. The bacon gets crispy on the edges and tastes SO good. Slather it with your favorite BBQ sauce and dinner is served!

How do you prepare BBQ chicken?

When making bbq chicken, be sure that you add more bbq sauce towards the end of grilling, once chicken reaches about 150 degrees F. If you add a lot of sauce too soon, it will char and that amazing, sweet bbq sauce flavor will be replaced with a not-so-great burned flavor. Another tip is I lightly salt the chicken before grilling. The flavors are enhanced and it turns out perfect.

  • 2 large chicken breasts, cut into 1 1/2″ – 2″ chunks, salted lightly
  • 1 1/2 cups of your favorite BBQ sauce
  • 1 lb bacon, cut into 1″- 1 1/2″ segments
  • fresh pineapple cut into 2″ chunks
  1. Combine chicken pieces with 1 cup of the BBQ sauce and marinate for 2-3 hours. (This step can be omitted if you’re pressed for time!)
  2. Microwave bacon for 2-5 minutes, depending on the thickness of your bacon and how crispy you like it. Let bacon cool slightly.
  3. Using skewers previously soaked in water for at least 1 hour, thread chicken, bacon pieces and pineapple in a pattern. The larger pieces of pineapple are easier to skewer. Fold thin bacon pieces over in half and arrange next to the chicken.
  4. Grill kabobs until chicken reaches 155-160 degrees F. Slather remaining 1/2 cup of BBQ sauce on kabobs when they’re nearly cooked. Cover loosely with foil and let sit for 5-10 minutes before serving.

  1. These skewers were so good and easy! I used center cut bacon and threaded it between the chicken and pineapple chunks like a ribbon. You could use teriyaki on this as well. Thanks for the inspiration!

        I don’t have a grill. Can these be baked as well? If so, what would you for temp and cooking time?

        • I’d bake these at 400 degrees F for about 15-20 minutes. Check with your meat thermometer- when chicken reaches 165 degrees, it’s done!

  2. could this be prepared one day ahead of time & stored in the fridge to grill the next day? Possibly keep the bacon raw?

    • Really, it all depends on how cooked you prefer your bacon. I like crispy bacon, & since the chicken doesn’t take that long to cook, it’s best if you begin cooking it before it goes on the grill. If you don’t cook it at all before grilling, it’ll be crispy around the edges and really soft in the middle. Just FYI!

    • I usually recommend Sweet Baby Ray’s BBQ sauce but I’ve gotten hooked on Kingsford sauce recently. LOVE it.It’s the brand that makes charcoal briquets- you’ll likely recognize the logo. 😉
