I’m a huge fan of chicken salad! I have no idea why it took me so long to add avocado, but trust me- I’ll never make chicken salad without it again. I love to just eat it with a fork but putting it atop RITZ® crackers is fantastic! Growing up we always had RITZ® in the pantry and now that I’m a mom ( x 5!) I appreciate finding a great snack that my kids love. One sleeve of RITZ® lasts about 30 minutes in our house- thank heavens for the family sized boxes! We love the Honey Wheat variety, but with so many options of RITZ® crackers to choose from, try several and see which one you like best! This recipe is a lovely blend of sweet and savory, crunchy and soft. It goes together so well and is a real crowd pleaser.

So… I give a recipe here, but know that it’s incredibly versatile. Want to use pineapple tidbits instead of grapes? Sounds perfect. Don’t like raisins? No worries, leave them out. Really- go with what you like- I always opt for more variety!
Avocado Chicken Salad
2 cups diced cooked chicken (canned version works well too!)
about 1/4- 1/3 cup plain yogurt (I use an entire 5.3 oz cup of yogurt)
1 medium avocado, diced
1/2 apple, diced but not peeled
2 stems of celery, sliced (about 1/2 cup)
about 1/2 cup sliced grapes
1/4 cup salted cashews
dash of salt, pepper, dried parsley and onion powder
dash of lemon juice
Chop, dice, and/or slice everything and toss in a bowl. Add the dash of lemon juice and stir a bit, coating the apples. Add in yogurt and stir, coating everything well. Mix in seasonings, tasting along the way. Spoon on top of your favorite RITZ® cracker and enjoy! I love the wheat varieties – WholeWheat and Honey Wheat.
My 3-year old daughter voted for the fun Spring RITZ®. I caved and got all of them.
