This Corn Salad with Fritos is a classic recipe that is perfect for the summertime! It is a family favorite and perfect for a warm evening- no oven required.
Can you make this Salad ahead of time?
This is an easy salad to make ahead of time. You can easily make this salad before serving- or make it up to one day in advance. Just mix the ingredients together as directed and store in the refrigerator. Make sure you don’t add the fritos until right before you are ready to serve or they will get soggy!
What kind of Fritos can you use for Frito Corn salad?
I’ve always used regular Fritos but if you want an extra kick you could use other flavors, too. BBQ, Chili Cheese, Classic Ranch or Lime Chili would be a yummy substitute.
Dressing for Frito Salad
The dressing for this salad is simple and quick to make! It is made with five ingredients that you mix together in a separate bowl – make sure it combines well!
The dressing calls for mayo and sour cream. If you’d like you can use a non-fat or low-fat variety.
Pressed for time? Use Ranch Dressing as a substitute!
Ingredients to make Frito Corn Salad
Here’s what you’ll need to make the salad:
–2 cans of corn, drained- I use the standard 15.25 oz cans
–Red Bell Pepper & Green Bell Pepper: you can get 2 of whatever types of bell peppers you’d like!
–1 can black beans, drained: I use the standard 15 oz cans. Be sure to drain and rinse them well.
–cheddar cheese- regular cheddar cheese or Cheddar Jack works well.
–Frito chips: You can use the regular variety but I also LOVE the Chili Cheese variety!
–Bacon bits
For the Salad Dressing, you’ll need:
–1/2 cup mayonnaise
–1/2 cup sour cream
–1 teaspoon salt
–1 teaspoon pepper
–1 teaspoon garlic powder
NOTE: In a pinch, you can use 1 cup of Ranch Dressing instead!

Yes, this Fritos Corn Salad is indeed gluten-free! The corn chips contain no gluten, nor do any of the vegetables (of course) and dressing.
Do you need to crush the Fritos for this salad?
I prefer to have the Fritos in large chunks so I don’t crush them. If you do want them smaller make sure you don’t crush them into crumbs because one of the best parts of this salad is the texture of the Fritos!
How long will Frito Salad stay good for in the fridge?
If you end up with leftovers you can store them in an airtight container for up to 3 days. However, the Fritos will get soggy so you may want to replenish the salad with new Fritos before eating again.
What do you serve with Frito Salad?
Frito Salad is a great side dish. It goes well with lots of summertime foods. Hot dogs, Hamburgers, Ribs, or Pulled Pork Sandwiches would be fantastic served along side this black bean and corn salad.
Adding a fresh fruit- watermelon, strawberries, or grapes would also make it a balanced meal.
