Cake for breakfast? Sign me up for that! Coffee cakes are a perfect alternative to sweet rolls or muffins and this one is absolutely delicious. Made with simple ingredients, this delicious breakfast cake is so easy to make and is perfect for brunch too!

WHAT IS COFFEE CAKE?
This super easy treat has been a favorite of mine since I was a little girl. It is so perfect for brunches, casual weekend breakfasts, breakfast buffet events, and more! Adding a glaze makes the presentation a little fancier, but the coffee cake is delicious with or without it.

APPLE OATMEAL COFFEE CAKE
Apple Oatmeal Coffee cake is made with flour, sugar, oil, eggs, milk, and chopped apples. Add in some vanilla, cinnamon, and allspice for a perfectly spiced coffee cake. Once the cake is baked, you can add a simple powdered sugar glaze on top if you’d like!

INGREDIENTS IN APPLE OATMEAL COFFEE CAKE
Flour – The recipe calls for all-purpose flour, but you can use wheat flour or a combination of the two if you prefer. You can also use a gluten-free substitute if necessary.
Baking soda – This is the leavening agent in the coffee cake. For best results, make sure that your baking soda isn’t old or expired.
Salt – Just a little bit of salt will help to intensify all of the other flavors in the coffee cake.
Allspice & cinnamon – These two spices pair perfectly with the apples and they add so much flavor to the recipe.
Sugar – Yep, you can’t have cake without sugar. If you prefer the cake to be less sweet, you can reduce the sugar.
Quick oats – The recipe calls for quick oats, but you can use rolled oats if you’d like. You can even use a combination of the two. Using rolled oats will make the cake a little chewier, but still delicious!
Oil – Any type of oil will work (canola, vegetable, etc), or you can even use coconut oil. Just make sure that the oil is melted to a liquid before adding to the other ingredients.
Egg – One large egg will bind all of the other ingredients together.
Vanilla extract – The higher the quality of the vanilla, the better.
Apple – This is the star ingredient of the recipe. You will need a crisp variety like Honeycrisp, Fuji, or Golden Delicious. Peel, core, and chop 1 large or 2 small apples to yield about 1 cup of chopped apples.
OPTIONAL GLAZE
Powdered sugar – Powdered sugar provides a smooth sweetness for the glaze.
Milk – Just a few tablespoons of milk will provide the liquid for the simple glaze. You can use any type of milk you have on hand, but if you want the glaze to be richer, use 2% or even half-and-half. To thin out the glaze, add a little more milk. If you want a thicker glaze, add a little less.
Vanilla extract – This adds a little flavor to the glaze. The higher the quality of the vanilla, the better.

HOW TO MAKE APPLE CINNAMON COFFEE CAKE
Preheat oven to 350°.

Mix the dry ingredients in a large bowl.

Add the oil, egg, and vanilla and mix until well combined.

Fold in the chopped apple.

Pour into a greased 8X8 pan. Bake for 35 minutes or until the center is cooked through.

If desired, add a drizzle of glaze on top of the warm coffee cake. To make the glaze, whisk the glaze ingredients together in a small bowl with a fork.
As with most baked goods, this coffee cake is best served warm!

Instructions

WHAT KINDS OF APPLES TO USE IN BAKING?
My favorite type of apple for baking (and eating!) is the Honeycrisp variety. These apples are very crunchy and they hold up well during the baking process. Sometimes the Honeycrisp apples are expensive, but Fuji apples work well too so that is a great alternative. You just don’t want to use a soft apple (like Red Delicious) because generally the flavor isn’t as strong and the softer apples tend to get mushier when baked.
How long is coffee cake good for?
Store at room temperature in an airtight container for up to 4 days. I like to reheat leftover coffee cake in an air fryer, but the microwave works well too! You can also serve the cake at room temperature, but I really think all baked goods are better warm.

CAN I FREEZE COFFEE CAKE?
Yes, you can freeze this cake after it has cooled completely. To do this simply place the cake in an airtight container or wrap each sliced piece in plastic wrap before storing it in an airtight container. Then when you want a piece you can thaw it on the counter or thaw the entire cake before slicing and serving. This is a great idea for lunch boxes!
WHAT TO SERVE WITH COFFEE CAKE
This cake recipe goes great with any of your regular morning favorites. From fresh fruits to orange juice, coffee, or even a tall glass of milk. If desired you could even serve a warm slice of breakfast cake with vanilla ice cream for an after-dinner dessert!
