Apple Oatmeal Coffee Cake is made with cinnamon, diced apples, and a few other basic ingredients. A delicious cake that can be eaten for breakfast or dessert!

- 1 cup flour
- ¾ tsp baking soda
- ½ tsp salt
- ¼ tsp allspice
- ¼ tsp cinnamon
- 1 cup sugar
- 1 cup quick oats
- ½ cup oil I use melted coconut oil
- 1 egg
- 1 tsp vanilla extract
- 1 cup apple peeled, cored, and chopped (use 1 large or 2 small/medium apples [Honeycrisp, Fuji, or Golden Delicious)
Preheat oven to 350°.
Mix the dry ingredients in a large bowl. Add the oil, egg, and vanilla and mix until well combined. Fold in the chopped apple. Pour into a greased 8X8 pan. Bake for 35 minutes or until the center is cooked through.
If desired, add a drizzle of glaze on top of the warm coffee cake. To make the glaze, whisk the glaze ingredients together in a small bowl with a fork.
As with most baked goods, this coffee cake is best served warm!
