What is pumpkin coffee cake?
Pumpkin coffee cake is a super simple boxed cake mix turned coffee cake using a can of pumpkin puree and then given a streusel topping. It’s sweet, moist, and well-spiced in every bite making it the perfect recipe to enjoy this Fall.
Pumpkin coffee cake ingredients
For the cake, you will need:
-Boxed cake mix: The base of the cake mix is one 15.25 ounce sized box of spiced cake mix. This is just the dry mix and you will NOT need the eggs, water, and oil requested on the back.
-Pumpkin puree: Use one 15-ounce can of pumpkin puree, NOT pumpkin pie filling as that is completely different from what we are wanting and will cause the recipe to fail.
For the streusel topping you will need:
-Sugars: Use 1 cup of brown sugar and ½ cup of granulated sugar for a sweet topping.
-Cinnamon: Adding in 1 ½ tablespoons of cinnamon will give us a wonderfully spiced topping.
-Butter: To help mix up everything into a nice crumble texture you will need 1 cup (two sticks) of melted butter.
-Flour: Get a nice texture from your opping and keep it from being too wet by adding in 2 ½ cups of all-purpose flour.
How to make pumpkin coffee cake
Preheat your oven to 350 degrees F and spray the inside of a 9×13 baking dish. Set aside.
In a large bowl, beat together the cake mix and pumpkin puree until well blended. The batter will be thick and that is okay.
Spread the batter evenly inside of the baking dish.
In another bowl, combine the streusel ingredients and let them sit for 5 minutes.
Use your fingers to pinch half of the streusel into pieces and drop it all over the cake. Crumble the rest and place them on top.
Bake in the oven at 350 degrees F and bake for 30 minutes or until a toothpick can be inserted and come out clean.
Cool slightly and serve. Enjoy!
Can I Use a Different Cake Mix?
Yes, if you don’t have a Spice Cake Mix on hand, you can use a white or Yellow cake mix and just add 1 tsp pumpkin pie spice blend! Easy!

Ingredients
- 15.25 oz spice cake mix
- 15 oz pumpkin puree (not pumpkin pie filling)
Streusel
- 1 cup brown sugar
- ½ cup granulated sugar
- 1 ½ tablespoons cinnamon
- 1 cup butter melted, 2 sticks
- 2 ½ cups flour
Instructions
- Preheat oven to 350 degrees. Spray a 9×13 baking dish with nonstick spray.
- In a large bowl, beat together cake mix and pumpkin. Batter will be thick, that is okay!! Spread the batter evenly in the dish.
- Combine the streusel ingredients and let sit for 5 minutes.
- Using your fingers pinch off half the streusel into pieces and drop all over the cake. Crumble the rest of the streusel and sprinkle all over.
- Bake at 350 for 30 minutes or until a toothpick inserted comes out clean.
- Cool slightly and serve!!
