I absolutely love desserts and cake is one of the best inventions ever. It can be served anywhere from a BBQ to a wedding and everything in between. This seven up pound cake would be great for any happy occasion too! This is why you’ll be pleased when I say this 7 Up cake recipe is easy.
What is a 7 Up cake?
7 Up cakes are a very popular dessert that you can find in some popular grocery stores including Walmart and Aldi but if you’re like me you can’t simply walk into a store for one thing and end up spending a ton of money for a cart full of stuff. Save yourself time, money, and excuses by simply making this 7 Up cake recipe from scratch. It will taste better, and feel better knowing you did it all by hand too.
While some cakes can be a labor of love, this one is super simple and fast to throw together. It doesn’t even need baking powder or baking soda! Less effort doesn’t reduce the love but it does reduce the time spent on your feet and I think we can all agree that sounds lovely, right? Made with a can of 7 Up (or similar brand lemon-lime soda) and a few other ingredients this cake turns out fabulous every time.
Ingredients for homemade 7 Up cake
-Butter: You will need 1 ½ cups of softened butter (3 sticks) to give our cake that rich moist crumb we’re looking for.
-Sugar: Adding 3 cups of granulated sugar will keep our cake nice and sweet.
-Eggs: To help our cake become the perfect texture we will need 5 large eggs.
-Flour: 3 cups of all-purpose flour will be the base of this cake recipe.
-Lemon: To keep our cake tasting nice and fresh use the juice of one lemon.
-7 Up: You’ll need ¾ cups of 7 Up in the cake batter.
7 Up cake glaze
-Powdered sugar: The base of the glaze is 3 ¼ cups of powdered sugar making it smooth and sweet.
-Vanilla: To help enhance the flavor use 1 teaspoon of vanilla extract.
-Lemon juice: To give us a fresh and tangy bite to our glaze add in 3 tablespoons of lemon juice.
-7 Up: Using 1/4 cup of 7 Up soda will help to make our glaze complement the cake better.
How to make 7 Up pound cake
Preheat your oven to 350 degrees F.
Cream together the butter and sugar in a large bowl until light and fluffy while using an electric mixer.
Mix in the lemon juice and the eggs, one at a time, until fully blended.
Mix in the flour.
Add in your 7 Up soda and mix until just combined.
Pour your cake batter into a well-greased bundt pan.
Bake in the oven for 1 hour or until a toothpick can be inserted and come out clean.
Cool the cake in the pan for 15 minutes before inverting it onto a wire rack and cooling completely.
In a bowl, combine all of the glaze ingredients and mix until smooth.
Drizzle the glaze over the cake
Garnish the cake with some lemon zest if desired

7-UP Pound Cake recipe
Ingredients
- 1 ½ cups butter softened
- 3 cups sugar
- 5 large eggs
- 3 cups flour
- 2 TBSP lemon juice
- ¾ cup 7-UP soda
Glaze
- 3 ¼ cups powdered sugar
- 1 teaspoon vanilla extract
- 3 TBSP lemon juice
- ¼ cup 7-UP soda
Instructions
- Preheat oven to 325 degrees.
- In a large bowl cream together the butter and sugar until light and fluffy with an electric mixer. Add in lemon juice and eggs one at a time. Mix in the flour.
- Add in the 7UP and mix until combined.
- Pour batter into a well-greased 10-12 cup bundt pan. Bake for 1 hour or until toothpick inserted comes out clean.
- Cool in the pan for 15 minutes, then invert onto a rack and let cool completely.
- Mix up all the glaze ingredients until smooth. Drizzle glaze all over the cake. Garnish with lemon zest if desired. Enjoy!

Bundt cake to loaf pan conversion
If you find yourself without a bundt cake pan, you can still enjoy this delicious cake recipe! You will need (2) 8×4 loaf pans to hold the batter. Divide the cake batter in half and cook up two loaf pans, as each pan can hold up to 6 cups of batter. You will need to check in on the cakes as they bake to make sure you don’t accidentally overcook them as the time will vary based on pan material, ovens, and other factors as well. After 30 minutes, check the cakes every 5-10 minutes as needed with toothpicks.
What is the difference between a bundt cake and a pound cake?
Both cakes are very similar and often confused for one another. A good rule of thumb is that bundt cakes are generally lighter in density and lighter cake in general whereas a pound cake is much more dense and heavy. Both can be cooked in a bundt cake pan but pound cakes can also be baked in loaf pans or a fluted tube pan (the ones you use to cook angel food cake).
