These easy pumpkin cheesecake bars are an incredibly tasty and flavorful dessert, perfect for any occasion and any time of day too! This recipe for pumpkin bars is simple to make, some of the ingredients you will already have at home and the rest are inexpensive to buy.
Pumpkin Cheesecake Bars
It’s October, which means we’re well into PUMPKIN season! Anyone else as excited as I am?! The leaves on the trees are changing and there is a crisp feeling to the air, which means my favorite time of year is upon us. I love opening up the windows and baking something delicious. These Pumpkin Cream Cheese Bars are just that. No one believes how easy they are to make, but it is true. I even made a video just to show you how simple they are. I hope you and your family enjoy these as much as mine does!

Pumpkin Cream Cheese Bar Ingredients
Crescent dough: You will need 2 packages of Pillsbury Crescent Dough Sheets, see tip below for this ingredient and why it works the best.
Cream cheese: Using 1 8-ounce block of cream cheese, softened, will create an amazing filling for these pumpkin bars.
Pure pumpkin: Adding in 1/2 cup of pure pumpkin will give this treat amazing flavor and texture.
Sugar: You need 1/2 cup of granulated sugar to make the filling nice and sweet.
Pumpkin pie spice: Use 1/2 teaspoon of pumpkin pie spice to create wonderful taste in this treat.
Topping
Butter: To brush the top of the crescent rolls, you will need 2 tablespoons of melted butter.
Sugar: Use 3 tablespoons of sugar to make these bars sweet and tasty.
Cinnamon: You will need 2 teaspoons of cinnamon to give this treat a nice warm spiced taste.
Pumpkin Glaze
Butter: For the smooth glaze, you will need 1 tablespoon of melted butter.
Powder sugar: To make the glaze wonderfully sweet, use 1 cup of powdered sugar.
Milk: Add 1-2 tablespoons of milk until you reach your desired consistency.
Pumpkin pie spice: For more amazing fall flavor, use 1/2 teaspoon of pumpkin pie spice.
Chopped nuts: Adding in 1/4 cup of chopped pecans or walnuts adds some amazing texture and crunch to every bite.
How to make Easy Pumpkin Cheesecake Bars
Prep
Start by preheating the oven to 350 degrees F. Then spray a 9×13 pan with non-stick spray, or line it with nonstick foil like I did.
Assemble
Next, open one of the rolls of crescent dough and arrange a sheet of dough on the bottom of the 9×13 pan, gently pressing the dough to fit.
Then, in a small bowl, combine the cream cheese, pure pumpkin, granulated sugar and 1/2 teaspoon of pumpkin pie spice, whisk together until smooth. Proceed to pour this mixture over the crescent roll sheet in the pan.
After that, open the remaining package of crescent dough and arrange on top of the pumpkin mixture, gently pulling sides and corners to fit across the entire top of the mixture and pan. Now, brush melted butter over the top of the dough.
Lastly, combine 3 tablespoons of granulated sugar and cinnamon, continue to sprinkle that mixture over the top of the melted butter.
Bake
Place the baking dish in the preheated oven and bake for 27-30 minutes, until the top is golden brown. Let the bars cool for about 30 minutes, then make the glaze.
Glaze topping
Whisk together the melted butter, powdered sugar, milk and pumpkin pie spice for the glaze. Drizzle on top of cooled pastry and if desired, sprinkle with your preference of chopped nuts on top.
Refrigerate the bars until completely cool, cut into squares, serve and enjoy!
What If I can’t find Crescent Sheets?
Crescent Dough sheets are perfect for this recipe because they have no perforated marks. If all you can find are the crescent rolls, you can still use them, just lay the whole sheet out into the 9×13 pan and press the perforated marks to seal them closed. Then continue on with the recipe!

Ingredients

You will want to store any leftovers in an airtight container in the fridge. Because this dish contains cream cheese, you will want to keep any leftovers cold.
Can I freeze pumpkin cheesecake bars?
You sure can! These can be stored and froze for up to one month, after that the crumble topping will start to loose the desired consistency. Be sure to store in an airtight container, keep the freezer burn from ruining this tasty treat. It might even be wise to wait to add the glaze until you are ready to enjoy the bars, it will freshen them up and you won’t lose any of the glaze when you defrost them.
