Pecan pie is a southern favorite, but it can be an overly sweet dessert that could be considered an acquired taste. Thankfully these pecan pie bars are much more subtle in sweetness and therefore so much better. Since I started making these pecan pie bars recipe for my husband’s family, it has quickly grown into a family favorite. They’re Grandma’s best and I’m excited to share them!
Another benefit of making these pecan pie bars is that you can serve a lot more people (depending on the sliced sizes). Making and cutting up a batch of pecan pie bars for a crowd is a great idea for those holiday office parties, potlucks, or family gatherings! Not to mention this recipe is incredibly easy to make too!
How to make these easy pecan pie bars
Make the crust and press it into a prepared pan. Bake for 20 minutes while you prepare the filling.
Spread the filling over the hot crust and bake a little longer.
Let the dish cool completely before slicing, then enjoy.
How do you test pecan pie bars for doneness?
With a normal pecan pie, you do a jiggle test and use a knife to see if it can come out clean. This isn’t much different here with the pecan pie bars. You want the pan to have a slight jiggle to it when you shake it in the oven, and you want a butter knife to be able to enter the center of the pan and come out clean. Similar to how you would check a baked good with a toothpick. Just make sure that the blade is inserted between pecans, so you get an accurate result.
Do pecan pie bars need to be refrigerated?
If you aren’t planning to serve the pecan pie bars as soon as they’ve cooled down (or shortly thereafter) then they should definitely be stored in the fridge until you plan on eating them. When stored in an airtight container in your fridge, these pecan pie bars can last up to 6-7 days.
Ingredients for Pecan Pie Bars
Crust ingredients:
-1 1/2 cups all-purpose flour
-1/4 cup brown sugar
-1/4 teaspoon salt
-1/2 cup butter
Filling ingredients:
-2 eggs
-3/4 cups light corn syrup
-3/4 cups white sugar
-2 tablespoons butter, melted
-3/4 teaspoons vanilla extract
-1 1/4 cups chopped pecans
How to make pecan pie bars
Preheat your oven to 325 degrees.
Line a 9×13 pan {or a quarters baking sheet} with foil and spray the foil with non-stick cooking spray.
In a large bowl, stir together the flour, brown sugar, and salt. Cut in 1/2 cup of butter until mixture resembles coarse crumbs. {I just use a fork.} Press into prepared pan and bake for 20 minutes in the preheated oven.
While the crust is baking, prepare the filling. In a large bowl stir together the eggs, corn syrup, white sugar, butter, and vanilla just until combined, then stir in the chopped pecans.
Spread the filling evenly over the crust as soon as it comes out of the oven.
Bake for 20- 25 minutes in the preheated oven, or until set.
Allow the bars to cool completely on a wire rack before slicing into bars.

Can you freeze pecan pie bars?
You can successfully freeze these pecan bars after they were cooled and set. If you plan on freezing them it’s best to have them cut and layered on a plate (or in a pan). Multiple layers should have a piece of wax paper between them so that they won’t stick. Then wrap in plastic wrap and store in an airtight container or bag. They can last just fine for up to 2 months this way!
How should you eat these pecan pie bars?
While you can eat them warm and fresh from the oven, it’s best to wait until they have set and cooled. Meaning room temp (or close to it) is ideal. You can also enjoy it chilled or simply reheat it in the oven for a few minutes if you’d like to relive the freshness again.
