Ingredients for Chocolate Mousse
Gelatin: To thicken the mousse, you need one .25-oz package of unflavored gelatin (about 2 ½ tsp).
Water: Use cold water to activate the gelatin and then boiling water to dissolve the gelatin.
Sugar: Granulated sugar mixed in the gelatin will soften the protein chains and help create a nice soft mousse consistency.
Whipping cream: For homemade whipped cream, you need 2 cups of cold heavy whipping cream.
Vanilla extract: Enhance the flavors by adding vanilla extract to the cream.
Cocoa powder: Use cocoa powder for the dark chocolate layer in this recipe.
Pudding mix: Add 3 TBSP of instant white chocolate pudding mix for the light chocolate layer.
Key Tips for making Chocolate Layered Mousse
Full instructions in the recipe card below, but here are a few tips to help make the process easier!
- Use an electric mixer or hand mixer to whip the heavy cream properly. This will save time and give your mousse a light, airy texture.
- Piping bags come in handy for layering the mousse cleanly. They help you create neat layers without mixing colors or flavors together.
- When whipping the heavy cream, make sure it is very cold. If you can, chill your bowl and whisk ahead of time. Cold cream whips better and gives your mousse a light, airy texture.

How long is this chocolate mousse good for?
Layered chocolate mousse can typically be stored in the refrigerator for up to 3 days. Ensure it is covered to prevent it from absorbing any odors from other foods. For the best texture and flavor, consume it within the first two days.
Can you freeze layered mousse cups?
Yes, you can freeze layered mousse cups. Place them in airtight containers to protect from freezer burn. Thaw the mousse in the refrigerator for several hours or overnight. Avoid thawing at room temperature to maintain texture.

Layered Chocolate Mousse Recipe
Ingredients
- .25 oz unflavored gelatin about 2 ½ tsp
- 2 TBSP cold water
- ¼ cup boiling water
- 1 cup granulated sugar
- 2 cups cold heavy whipping cream
- 2 tsp vanilla extract
- ¼ cup cocoa powder
- 3 TBSP instant white chocolate pudding mix
Instructions
- Prep gelatin: Add cold water to a small bowl and sprinkle with gelatin. Let sit 2 minutes, then add boiling water and stir until gelatin is dissolved and mixture is clear. Set aside to cool slightly.
- Whipped cream: In the bowl of an electric mixer, combine the sugar, heavy whipping cream and vanilla. Beat on medium speed until stiff peaks form, scraping bowl occasionally.
- Pour in gelatin mixture and beat another minute. Remove half the whipped cream mixture and set aside in a different bowl.
- Mousse: To the remaining cream in the mixing bowl, add in dry white chocolate pudding mix. Mix until thoroughly combined. Transfer to a piping bag and refrigerate.
- Take the remaining cream and place it back in the mixing bowl. Add in the cocoa powder. Mix until thoroughly combined. Transfer to a piping bag.
- Assemble: Line up 8 glasses about 1-1 ½ cups in size. Pipe a layer of the dark chocolate mousse first, then a layer of the white chocolate mousse. Repeat with both mousse layers, ending with white mousse on top. Dot with fresh raspberries, cherries, a whole strawberry, chocolate shavings, or whatever you desire!
- Refrigerate until ready to serve. If you're chilling the mousse cups for longer than an hour, gently lay a piece of plastic wrap over the tops until you're ready to serve. Enjoy!

Variations of Chocolate Mousse
Chocolate mousse can be adapted into various delightful versions. Each variation offers a unique twist on the classic dessert. Here are some popular options:
- Mint Chocolate Mousse: Adding mint extract creates a refreshing flavor that pairs well with the richness of chocolate.
- Vegan Chocolate Mousse: This variation uses ingredients like avocado or silken tofu to replace traditional dairy. The result is a creamy texture without animal products.
- Spiced Chocolate Mousse: Adding spices like chili powder or cinnamon introduces warmth and complexity. It appeals to those looking for an adventurous twist.

What are stiff peaks?
Stiff peaks is the term given to ingredients like whipped cream or egg whites after they have been beaten and had so much air incorporated into them that they turn solid and stable enough to stand on their own. If you lift an electric mixer beater straight up and out of the mix, there should be little mountains at the end of the beaters that hold out straight and do not bend downward. To bend downward is a soft peak, and to continue beating for another minute or so will give you stiff peaks.
Tips for achieving the best texture in layered chocolate mousse
To achieve the best texture in layered chocolate mousse, use high-quality chocolate to enhance richness. Folding in the chocolate gently maintains the airy consistency necessary for layers.
