Layered Chocolate Mousse Recipe

Ingredients

  • .25 oz unflavored gelatin about 2 ½ tsp
  • 2 TBSP cold water
  • ¼ cup boiling water
  • 1 cup granulated sugar
  • 2 cups cold heavy whipping cream
  • 2 tsp vanilla extract
  • ¼ cup cocoa powder
  • 3 TBSP instant white chocolate pudding mix

Instructions

  • Prep gelatin: Add cold water to a small bowl and sprinkle with gelatin. Let sit 2 minutes, then add boiling water and stir until gelatin is dissolved and mixture is clear. Set aside to cool slightly.
  • Whipped cream: In the bowl of an electric mixer, combine the sugar, heavy whipping cream and vanilla. Beat on medium speed until stiff peaks form, scraping bowl occasionally.
  • Pour in gelatin mixture and beat another minute. Remove half the whipped cream mixture and set aside in a different bowl.
  • Mousse: To the remaining cream in the mixing bowl, add in dry white chocolate pudding mix. Mix until thoroughly combined. Transfer to a piping bag and refrigerate.
  • Take the remaining cream and place it back in the mixing bowl. Add in the cocoa powder. Mix until thoroughly combined. Transfer to a piping bag.
  • Assemble: Line up 8 glasses about 1-1 ½ cups in size. Pipe a layer of the dark chocolate mousse first, then a layer of the white chocolate mousse. Repeat with both mousse layers, ending with white mousse on top. Dot with fresh raspberries, cherries, a whole strawberry, chocolate shavings, or whatever you desire!
  • Refrigerate until ready to serve. If you're chilling the mousse cups for longer than an hour, gently lay a piece of plastic wrap over the tops until you're ready to serve. Enjoy!

Notes

Leftover chocolate mousse can be stored in the refrigerator for up to 3 days. Cover the glass to prevent it from absorbing any odors from other foods. For the best texture and flavor, consume it within the first two days.
