These cute little Gingerbread Snowman Truffles have quickly become a favorite in my household. They are so easy to make, just use gingersnaps or gingerbread cookies mixed with cream cheese and voila! Then dip them in white chocolate before adding little Reese’s cup hats, gum drop noses, and licorice scarves!
I love making this gingerbread truffle recipe with ginger spiced cookies because you get a gingerbread-flavored truffle that tastes like it was frosted with cream cheese frosting, and you get a sweet pop of flavor from the white chocolate coating too!

Gingersnaps– Use 12 ounces of gingersnaps or gingerbread cookies for the truffle filling.
Almond bark– You will need 1 pound of white almond bark to coat all the truffle balls.
Gum drops– Use a few orange gum drops to make the noses.
Twizzlers– Twizzler pull and peels will work well to create the snowman scarves.
Reese’s cups and Oreos– You will need mini Reese’s cups and mini Oreo cookies to form the hat for the snowmen.
Frosting– Use black colored frosting for the eyes and embellishments. You can buy pipeable black frosting in bags ready to go in your grocery store’s baking section.
How to make Gingerbread Snowman Truffles
Truffle filling
Get started by crushing the gingersnap cookies into a fine crumb using a food processor. Or you can place them into a large ziplocked bag and roll over them with a rolling pin until they are a sand like mixture.
Then, transfer the cookie crumbs to a large bowl and add in the softened cream cheese as well.
To make this process easier, use an electric mixer to fully combine these ingredients well.
Scoop
Proceed to use a 1 1/2 tablespoon sized scoop to make rounded scoops of filling. Roll the mixture into little balls and then set them onto a baking sheet lined with parchment paper.
Chill
Place the tray with the truffles into the fridge and chill for about 30 minutes. Or if you want to speed this process up, put them in the freezer for 15 minutes.
Assemble
When you are ready to dip the truffles, melt the chocolate bark in the microwave in 30 second intervals, stirring between each, until the bark is smooth and completely melted.
Proceed to spoon a little bit of melted chocolate into the shape of a puddle onto the parchment paper.
Then dip each ball into the white chocolate using 2 forks, and then shake off any excess chocolate.
Place each truffle onto the chocolate puddles, repeat with all the remaining truffles.
Once the chocolate has set, you can start to decorate the truffles.
Decorate
For the snowman scarf, take one of the peels from the Twizzlers ad wrap it around each the base of the truffle.
Next, cut the orange gum drops into tiny triangles and use them for the carrot noses.
Then, use the black frosting to dot on two eyes.
Also, use the frosting to secure the top half of an Oreo to each snowman’s head. Then add a mini Reese’s cup to the top of the Oreo cookie to finish off the hat.

Helpful Tips and Variations
You can use gingersnap cookies, gingerbread cookies, or even molasses cookies for this recipe. If desired, you can add in a pinch of ground cinnamon (or use cookies with cinnamon in them). Try painting the eyes using a paintbrush or black food coloring. Edible paint pens also make this process a little easier too. You can keep these truffles in an airtight container in the fridge for up to 1 week. This gives you plenty of time to enjoy them throughout the week.
Can I freeze no bake truffles?
Yes, you can freeze these truffles if you would like. But keep in mind that the chocolate coating will sweat as the truffles thaw, which could cause food coloring to bleed and the cookies to soften. If you want to freeze them, keep them in an airtight container for up to 3 months. Thawing overnight in the fridge will reduce the condensation on the truffles as they thaw.
Can I make snowman truffles smaller?
