Gingerbread Snowman Truffles

Ingredients

  • 8 oz cream cheese softened
  • 12 oz gingersnaps or gingerbread cookies
  • 1 lb. white almond bark
  • 12 Orange gumdrops
  • 2 Twizzler pull and peels
  • 12 Mini Reeses Cups
  • 12 Mini Oreos
  • Black frosting

Instructions

  • Truffle filling: Crush the gingersnap cookies into a fine crumb using a food processor. Or place them into a large ziplocked bag and roll over them with a rolling pin until they are a sand like mixture.
  • Transfer the cookie crumbs to a large bowl and add in the softened cream cheese. Use an electric mixer to fully combine these ingredients well.
  • Scoop: Use a 1 ½ tablespoon sized scoop to make rounded scoops of filling. Roll the mixture into little balls and then set them onto a baking sheet lined with parchment paper.
  • Chill: Place the tray with the truffles into the fridge and chill for about 30 minutes. Or if you want to speed this process up, put them in the freezer for 15 minutes.
  • Assemble: Melt the chocolate bark in the microwave in 30 second intervals, stirring between each, until the bark is smooth and completely melted. Spoon a little bit of melted chocolate into the shape of a puddle onto the parchment paper. Then dip each ball into the white chocolate using 2 forks, and then shake off any excess chocolate. Place each truffle onto the chocolate puddles, repeat with all the remaining truffles. Once the chocolate has set, you can start to decorate the truffles.
  • Decorate: For the snowman scarf, take one of the peels from the Twizzlers and wrap it around each the base of the truffle. Cut the orange gum drops into tiny triangles and use them for the carrot noses. Use the black frosting to dot on two eyes. Use the frosting to secure the top half of an Oreo to each snowman's head. Add a mini Reese's cup to the top of the Oreo cookie to finish off the hat. Serve and enjoy!

Notes

Store leftover gingerbread snowman truffles in an airtight contain, in the fridge, and they will last up to 7-10 days.
