Double Chocolate Mint Cookies are delectable cookies rich in flavor. These mint choco cookies are loaded with luscious chocolate and topped with a creamy mint frosting.
These double chocolate mint cookies taste comparable to a very popular Girl Scout cookie, but they have the texture of chocolate chip cookies. This mint chocolate chip cookie recipe is made with some simple pantry ingredients and results in a chewy, chocolatey heavenly treat!
Double Fudge Mint Cookies
The combination of mint and chocolate is one of my favorites, I do not know if there is a better pairing. For this recipe, I was inspired by my Mint Chocolate Brownies and thought it would be a fun idea to make that treat in cookie form. The results are a sensational cookie and they take less time to make as well. I no longer find the need to buy store-bought cookies to ease my craving for a chocolatey treat, these cookies are just too good!
Chocolate Mint Cookie Ingredients
Cookie dough
-Chocolate chips: For the ooey-gooey chocolatey goodness you need 1 cup of semi-sweet chocolate chips.
-Flour: Use 1 cup flour for the base of this cookie recipe.
-Cocoa powder: You need 1/4 cup cocoa powder for the extra depth of chocolate flavor.
-Baking powder: Using 1 tsp baking powder will provide the leavening agent needed for a nice rise in the cookies.
-Salt: You need 1/2 tsp salt for a nice balance of flavor to this cookie.
-Butter: Use 5 TBSP butter for a wonderful texture and rich flavor.
-Brown Sugar: You will need 3/4 cup brown sugar for a perfect sweet cookie.
-White sugar: Using 1/4 cup granulated sugar will add even more sweetness to this fudgy treat.
-Eggs: You need 2 eggs to bind the dough together in this recipe.
-Vanilla extract: Adding 1 tsp vanilla extract will provide an enhanced flavor of goodness to these cookies.
Mint Frosting
-Powder sugar: You will need 1 1/4 cups powdered sugar for a lovely creamy topping.
-Butter: Using 2 TBSP melted butter will provide a perfect balance of creamy and rich flavor.
-Corn syrup: You need 2 tsp corn syrup for a nice thick texture for the frosting.
-Mint extract: Using 1 tsp mint extract will give this frosting a perfect minty flavor.
-Milk: Adding 1-2 TBSP milk helps thin out this frosting and provides a nice creamy texture.
-Food coloring: Use 2 drops of green food coloring for a fun take on this mint cookie.
Fudge drizzle
-Chocolate chips: You will need 1/2 cup semi-sweet chocolate chips for the extra layer of chocolate.
-Butter: Use 1 TBSP butter to help thin out the chocolate and provide a wonderful rich flavor.
Step by step on how to make Double Fudge Mint Cookies
Prep
Preheat the oven to 350 degrees F. Then, line a cookie sheet with parchment paper. Set aside.
Cookie dough
In a small bowl, combine the flour, cocoa powder, baking powder, and salt, set aside.
Then, melt the chocolate chips in the microwave (about 1.5 minutes) and stir until smooth.
In a separate medium-size bowl, cream together the butter and white and brown sugar until smooth.
Next, beat in the eggs one at a time and then stir in vanilla extract until well blended. Add in the melted chocolate and stir to combine.
After that, mix in the bowl of dry ingredients just until everything comes together. Let stand for 10 minutes so the chocolate can set.

Bake
Proceed to drop rounded tablespoonfuls of cookie dough onto the prepared cookie sheet.
Bake for 8-10 minutes. Allow cookies to cool for a few minutes before transferring to a cooling rack.
Mint Frosting
Whisk together all the frosting ingredients in a medium-size bowl until nice and smooth.
Once cookies have cooled for about 10 minutes, spoon about 2 tsp on top of each cookie and spread it out over the whole cookie.
Fudge drizzle
In a small bowl add the chocolate chips and butter, microwave in 30-second intervals until fully melted and creamy.
Once the frosting has set for about 5-10 minutes, using a spoon, drizzle each cookie with the fudge mixture.
Serve immediately and enjoy!

Can I freeze decorated cookies?
Yes, you can! After the frosting has been applied, allow them to set it at room temperature for about an hour so that the frosting can firm up a bit. Then place the cookies in a single layer on a baking sheet and flash freeze until solid (about 1-2 hours). After that, transfer to an airtight container. I recommend laying a sheet of parchment paper between the cookie layers, just in case. Then simply remove and thaw to eat.
How long will frosted cookies be good for?
These cookies will last up to 1 week if you keep your cookies properly stored in an airtight container at room temperature.
How do you keep cookies soft?
The main way and simplest to keep cookies fresh is to seal them in an airtight container, like a resealable freezer bag. There is also a nifty little trick that my mother-in-law taught me, add a piece of bread to the bag. This trick really works! The cookies absorb moisture from the bread and stay soft a couple of days longer than normal. Give it a try, it will blow your mind!

Does the drizzle eventually harden? I’m really hoping to use this recipe for a holiday event, and as we have limited space, I’ll need to stack layers of cookies between parchment paper on one plate. I’d love to know if the drizzle hardens so I’m able to stack layers of cookies without the drizzle smearing everywhere and ruining the whole appeal. Thank you in advance!

Yes, it hardens! You can even reduce the amount of butter in the chocolate drizzle to 1 tsp and it’ll harden faster. : )
