Strawberries: You need two for each cheesecake, for a total of 16 strawberries, rinsed and patted dry.
Chocolate: Use semi-sweet dipping chocolate to cover the strawberries.
Heavy cream: Make homemade whipped cream with 1 ¼ cups of heavy whipping cream.
Powder sugar: Sweeten the cream with powdered sugar.
Cream cheese: For the cheesecake base you need 24 ounces of cream cheese, softened to room temperature.
Sugar: Adding granulated sugar to the cream cheese will balance the tangy with a bit of sweetness.
Sour cream: Using ¼ cup of sour cream softens the texture of the cheesecake nicely.
Vanilla extract: Enhance all the wonderful flavors by adding vanilla extract.

Crust
Graham crackers: The crust base is graham cracker crumbs.
Sugar: Add 1 tablespoon of sugar to the mixture.
Butter: Bind the crust ingredients with melted butter.

- Quality chocolate matters here, buying high-quality melting chocolate can improve the texture and shine of the strawberries. It is important to melt it gently and slowly to prevent burning.
- The correct tools are important! An 8-cavity silicone cylinder mold with a 3.89 ounce capacity shapes the cheesecake into neat, uniform portions. They are flexible and non-stick, ensuring easy removal without damaging the delicate dessert.

How long are these cheesecakes good for?

No Bake Chocolate Covered Strawberry Cheesecakes Recipe
Ingredients
- 16 strawberries rinsed and patted dry, 8 w/ stems & 8 w/o stems
- ½ pound semi-sweet dipping chocolate
No-Bake Cheesecake
- 1 ¼ cups heavy whipping cream
- 2 TBSP powdered sugar
- 24 ounces cream cheese softened to room temperature
- ½ cup granulated sugar
- ¼ cup sour cream
- 1 tsp vanilla extract
Instructions
- Chocolate covered strawberries: In a microwave safe dish, heat the chocolate in 30 second increments, until smooth and completely melted.
- Cut the green tops off of 8 of the strawberries. Dip the cut strawberries into the chocolate to cover and place on parchment paper to cool and set. Also dip the strawberries with the tops still on into the chocolate and set aside to cool. (These are used for garnish toppers.)
- Cheesecake mixture: In a large bowl, use an electric mixer to mix the heavy whipping cream and powdered sugar until stiff peaks form.
- In another bowl whisk the cream cheese, granulated sugar, sour cream and vanilla until smooth.
- Transfer the cream cheese mixture into the bowl with the heavy whipping cream and mix until well combined. Fill the molds halfway with the cheesecake mixture.
- Place one of the chocolate covered strawberries with no tops into each mold, pressing down into the cheesecake mixture. Fill the rest of the mold with more cheesecake mixture until full. Scrape tops to level.
- To make the graham cracker crust: melt the butter in a microwave safe bowl. Add the graham cracker crumbs and 1 tablespoon of sugar.
- Spoon some of the graham cracker mixture onto the top of each cheesecake pressing the crumbs into the batter.
- Place the mold onto a tray and place in the freezer for 2-4 hours. Carefully remove the cheesecakes from the molds. Top each with a chocolate covered strawberry. Serve & enjoy!

How do you Soften Cream cheese?
Here in the US, cream cheese comes in an 8-oz brick wrapped in foil packaging. Most recipes call for softened cream cheese, which can be done in a few different ways:
- Microwave it! Just 20 seconds or so in the microwave will sufficiently soften cream cheese. Be sure to remove the foil packaging first and to place the cream cheese in a microwave safe bowl.
- Hot towel wrap! This is what I tend to do most often. All you do is get a clean kitchen rag, get it soaking wet with hot water, then ring it out quickly and wrap the hot towel around the foil package of cream cheese. It takes just a few minutes and it’s softened!
- Let it sit out! If you can plan ahead, the absolute easiest way to soften cream cheese is just to let it sit on the counter for an hour or two. Easy!

How do you make sure that chocolate sticks to the strawberries?
Make sure strawberries are completely dry before dipping. Moisture prevents chocolate from sticking properly. Use room temperature chocolate melted smoothly to coat the berries. A quick dip followed by setting on parchment paper helps the chocolate harden evenly.
Are there any flavor additions I can make to these cheesecakes?
Vanilla extract can be swapped or combined with almond extract for a different aroma. Adding a teaspoon of lemon zest brightens the cream cheese filling nicely.
Mixing a tablespoon of cocoa powder into the cream cheese adds a mild chocolate flavor. A sprinkle of cinnamon or espresso powder can also enhance richness.
