I got this recipe from a friend a long time ago and am not really sure why it is called Cherries Alaska, but I think it’s because it has some resemblance to Baked Alaska? I only have ever tried Baked Alaska once and that was many years ago and I don’t think I was a fan, but this cherry version is delicious and actually doesn’t require any baking at all! It’s kind of like cheesecake but without any cream cheese!
1 1/2 cups graham cracker crumbs
1/4 cup melted butter
1/4 cup sugar
Combine the graham cracker crumbs, butter and sugar in a bowl and mix well. Press in the bottom of an 8X8 pan. (I have also made this dessert in a pre-made graham cracker pie crust and it works well too!)
10-ounce pkg marshmallows
3/4 cup milk
1 cup whipping cream
21 ounce can cherry pie filling
Put the milk in a sauce pan and melt the marshmallows in the milk over low heat. Cool. Whip the whipping cream until soft peaks form. Fold the whipping cream into the cooled marshmallow mixture. Spread half the mixture over the graham cracker crust and chill for 15 minutes. Spoon the cherry pie filling over the top and then cover with remaining marshmallow mixture. You can sprinkle a few graham cracker crumbs on the top if desired. Chill until set. (It seems to be pretty well set after a couple of hours, but I have found that it is completely set and easier to cut if you chill overnight before serving.) Enjoy!
