Rainbow Jello Parfaits are such a festive and fun treat for many occasions, especially for your kids on St. Patrick’s Day! To make these joyous Jello parfait cups you only need two simple ingredients…Jello and yogurt!
There are so many styles of parfaits that you can make, we are particularly fond of Jello parfaits. They are inexpensive to make, they can be made in so many different and fun colors and they are huge crowd pleasers. This Jello dessert recipe has become a favorite in our family. We like to experiment with different flavors and colors, it is fun the whole family enjoys!
Rainbow Jello Parfaits
Rainbow Jello Parfaits are something I decided to experiment with this year – I usually don’t go all out for St. Patrick’s Day at my house, but I try to do something fun for my kids. These layered Jello treats are so easy, and if you pick the right colors, it looks just like a rainbow! You do have to give yourself a day to make them just to allow all of the layers to set, but each layer only takes a few minutes to make so it is not as hard as it may seem!

Rainbow Jello Parfait ingredients
-Jello: You need 6 small boxes of Jello (3 oz). Use whatever flavors you want as long as you have purple, blue, green, yellow, orange and red!
-Yogurt: Use 3 cups vanilla yogurt for a lovely creamy texture. I used Greek yogurt just to add some more protein and feel a little bit healthier but you can use whatever your favorite yogurt is.
Easy step my step on how to make Rainbow Jello Parfaits
I used 5 oz parfait dishes and made 10 parfaits. The smaller the dish, the shorter the set time for each layer! You will also want to use a clear dish, that way you can see the beautiful rainbow layers.
For each layer of Jello/color, boil 1 cup of water (I do this in the microwave) and then add the box of Jello.
Stir until the Jello is totally dissolved and then pour half of the Jello mixture into a different dish. Then, add ½ cup of yogurt to the separated half of the Jello mixture and stir until well combined.
Pour the yogurt/Jello mixture into your parfait dishes/cups you are using and then refrigerate until set.
Repeat for each color/flavor of Jello.
Back to the other half of each of the Jello, add 3 Tbsp cold water and set aside.
As soon as the yogurt layer is set, you can pour the reserved (non-yogurt) Jello on top.
Keep repeating until you have used up all of the Jello and have layered all the different colors.
*If you are doing a rainbow, you will want to remember that you need to have room for 12 layers, so try to pour them accordingly. If you use dishes that are smaller on the bottom than the top, you may need to use less Jello on the bottom layers – I just poured any extra Jello into an additional bowl and let my kids have it as an extra snack!

Did the layer without yogurt stay liquid while the first layer set? It seems like it would at least be too thick to make a smooth thin layer in the parfait dishes.

It will thicken up a little bit, but it should still be liquid for sure.
