I love apples, but traditional pie crusts have never been my favorite, so I’m constantly trying to find new apple recipes that are almost like pie, but not quite. This recipe is perfect. These bars taste kind of like apple pie, but more like cookie bars. They are easy to slice and serve, and like all apple desserts, they taste the best when eaten warm with a big scoop of vanilla ice cream!
What are Sour Cream Apple Pie Bars?
Apple Pie Bars are made with two different layers. The bottom crust is made with flour, brown sugar and butter and then part of the crust recipe is mixed with sour cream, cinnamon and a few other basic ingredients. Freshly chopped apples are mixed in as well before baking. These Apple Pie Bars taste a lot like apple pie, but taste more like a cookie. Pretty much the perfect apple dessert!
Ingredients in Sour Cream Apple Pie Bars
Flour – All-purpose flour works great, but you can use cake flour if you prefer. You could swap all or part of the flour with whole-wheat flour if you’d like, but the taste and texture will definitely be different.
Brown sugar – Make sure your brown sugar is fresh and soft. I always use light brown sugar, but you can use dark brown sugar if you prefer a richer flavor.
Butter – Real butter works best. I use salted, but unsalted works too! Just make sure the butter is completely softened to room temperature before adding to the other ingredients.
Cinnamon – Can’t make an apple dessert without cinnamon!
Baking soda and salt – For best results, make sure the baking soda isn’t old or expired.
Sour cream – The sour cream adds the perfect amount of moisture and flavor to the recipe. I usually swap out sour cream with plain Greek yogurt and that works beautifully in this recipe. I’ve even used vanilla Greek yogurt and it intensifies the flavor a little bit and is absolutely delicious.
Vanilla extract – The higher quality of the vanilla, the better!
Egg – Just one egg, but make sure to beat it for a few seconds before adding to the mixture.
Apples – You will need about 2 cups of peeled and chopped apples for this recipe. This usually means you’ll need about 2 apples, depending on the size of the apples. Honeycrisp apples are my favorite and they work really well in this recipe, but you can use Granny Smiths, Golden Delicious, Braeburns or Jonagolds…any type of really crisp apples work best for baking.
How to make Sour Cream Apple Pie Bars
Preheat oven to 350°.
In a mixing bowl, combine flour, brown sugar and butter, blend until crumbly. Press about 2 3/4 cups of the crumb mixture into the bottom of a greased 9X13 pan.
To the remaining crumb mixture, add cinnamon, baking soda, salt, sour cream, vanilla and egg. Beat until thoroughly combined. Stir in apples. Spoon evenly over bottom layer.
Bake for 35-40 minutes. Cool and cut into squares. Garnish with whipped cream before serving.

- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup sour cream
- 1 tsp vanilla
- 1 egg beaten
- 2 cups apples peeled and chopped
Instructions

WHAT IS THE BEST APPLE FOR APPLE PIE BARS?
You want to make sure that you choose a good baking apple variety. These are harder apples that hold up well to baking without becoming too grainy. Some examples would be Granny Smiths, Honeycrisps, Golden Delicious, Jonagold, and Braeburns but there are other apple varieties good for baking not included on this list. Use one type or a variety for a more flavorful dessert.
