Chicken Alfredo Soup Ingredients
Onion: You need ⅓ cup of diced sweet onion for this soup.
Butter: Using 2 TBSP of butter will cook the onions as needed.
Chicken broth: Use 28-ounces (3 ½ cups) of chicken broth for the base of our soup recipe.
Frozen peas: Add 1 cup of frozen peas, don’t use canned peas as their texture will not hold up well.
Pasta: You will need 1 cup of uncooked pasta for this soup.
Chicken: A ½ cup of chicken, cooked and diced chicken is needed. Use up leftover chicken or if you prefer a rotisserie chicken that would be yummy and easy too.
Cornstarch: Our soups thickener is 1 TBSP of cornstarch.
Parmesan cheese: Top this soup with some parmesan cheese when serving for extra added goodness.

Alfredo sauce
Butter: You need 3 TBSP of butter for making our easy roux sauce.
Flour: Adding 1 ½ -2 TBSP of flour will thicken the sauce to the perfect consistency.
Milk: Use 2 cups of whole milk (preferably) although other milks could work as well.
Cream cheese: 4-ounces of cream cheese will make the sauce creamy, rich, and thick.
Parmesan cheese: You need ¾ cup of parmesan cheese for extra cheesy goodness.
Garlic powder: You need 1 tsp of garlic powder to flavor this soup.
Salt and Pepper: This will be added to taste at the end so that you can get it tasting delicious to your own standards.

Step by step on how to make Chicken Alfredo Soup
Alfredo sauce
Melt the butter in a medium saucepan on medium-low heat. Once the butter has melted, whisk in the flour. Gradually add the milk, whisking to combine as you go. After all the milk has been added and it’s hot [do not boil!] add the cream cheese, whisk again to combine.
Bring the sauce to an ALMOST boil, then add in the parmesan cheese. Reduce the heat to low, let the sauce simmer until all the cheese has melted and is mixed well. Then add salt, pepper, and garlic powder to your taste.

Prep
Dice the onions into small pieces and then set them aside. The chicken also needs to be cooked & chopped before assembling the soup. You can use leftover chicken from a previous meal, a rotisserie chicken, or try our recipe for simple shredded chicken in the crockpot.
Assemble soup
Start by adding the butter and diced onion to a medium-sized saucepan, over medium heat. Cook the onions for about 5 minutes until they are translucent and soft.
Set aside ¼ cup of the chicken broth at this time, it will come into play later. Then add the rest of the chicken broth, the frozen peas, and the uncooked pasta. Increase the heat to medium-high and bring the mixture to a boil.
Proceed to cover the pot and reduce the heat to a simmer, cook for 10 minutes.
Now add the alfredo sauce you made and the cooked chicken, continue to cook for an additional 10 minutes. Mix in the remaining chicken broth you set aside earlier, along with 1 TBSP of cornstarch, stirring them both into the soup.
Serve your soup topped with additional parmesan cheese for garnish. Enjoy!

Loved this! Made it in 2017 as you did with a couple of additions and changes: extra peas, broccoli florets, a tablespoon of Better than Bouillon roasted garlic flavor, basically the entire shredded rotisserie chickens (skin removed) instead of just a half cup, and double the noodles. We added a bit more broth to compensate for the extra ingredients and then had enough soup for the work week for both of us! It was better for us than just doubling the recipe, because we don’t need that much extra and we like thicker soup.

No, adding the pasta is not in step 2. It’s not in any of the steps. Now I’m waiting for the pasta to cook, but I can’t boil the soup to cook it as the soup will curdle. Not having this for dinner tonight.
