Easy Corn on the Cob - Butter With A Side of Bread

We’ve been on a corn-on-the-cob kick this summer so I thought I’d share this super simple recipe with you. It’s fast, it’s easy and everyone loves it. I created a video to show how I’ve been cooking our corn too- LOVE this method!! It’s mess-free and done in no time at all. Enjoy!

Easy Corn on the Cob

  • 4 ears of corn, husks on
  • 2 TBSP melted butter
  • 1/4 tsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp Parmesan cheese, Kraft grated variety
  • 1/8 tsp pepper

Wash the outside of the corn husks, just to get any obvious dirt off. Place 2 of the ears of corn on a plate (husks and all!) and microwave according to the info below. (I found it was easier to do mine in sets of 2, although I could fit 3 in my microwave.)

Microwave 1 ear of corn for 3-5 minutes

Microwave 2 ears of corn for 5-8 minutes

Microwave 3 ears of corn for 7-10 minutes

After corn is cooked, let sit for another 2-3 minutes in microwave. Cut the stalk side and squeeze opposite end of the corn, until corn falls out of the husk.

Combine butter and remaining ingredients. Brush over corn and serve!

Tips: When the microwave is done, corn should feel really hot. The spans of time differ just because some ears of corn are skinnier/ fatter than others. If corn doens’t feel really hot, put it back in for another minute or so. Also, if your corn doesn’t slip easily out of the husk after cutting the stalk, it’s either not cooked enough (put it in for another minute) or you didn’t cut enough of the stalk off.
