It’s a loaf of pumpkin bread that has added boxes of pudding in the batter to help add moisture, flavor, and awesomeness. You won’t ever want to try a plain loaf of pumpkin bread again after trying it this way! Luckily, this pumpkin bread recipe makes 2 large loaves (or several mini) so there’s plenty to snack on!
Pumpkin Pudding Bread Ingredients
-Pumpkin: We need a 15ounce can of pumpkin puree (not pumpkin pie filling) to make this pumpkin bread.
-Eggs: 6 eggs will help the leavening and act as the binder for this quick bread.
-Applesauce: You can use 2/3 cup of cinnamon flavored applesauce or use plain applesauce and add in 1 teaspoon of cinnamon.
-Oil: 1/2 cup of canola or vegetable oil will help to add fats to the bread batter, making the results much nicer.
-Flour: 2 cups of all-purpose flour will act as the gluten-base for this bread recipe.
-Sugar: We will need 1 1/2 cups of granulated white sugar to make a sweet quick bread.
-Vanilla pudding: We want 1 small box of cooked and serve vanilla pudding (just the dry mix).
-Butterscotch pudding: We also want 1 small box of butterscotch cook and serve pudding (just the dry mix).
-Pumpkin pie spice: 1 tablespoon of pumpkin pie spice will help to add a lot of fall spices into every bite.
-Leavening agents: We need 2 teaspoons of baking powder and 1/2 teaspoon of baking soda to get a good rise out of the loaves.
-Salt: With 1/2 teaspoon of salt we can enhance the flavors in this loaf and really make them taste great!
How to Make Pumpkin Pudding Bread
Whisk together the pumpkin puree, eggs, applesauce, and oil in a large bowl.
In another large bowl, mix together the remaining ingredients.
Stir the pumpkin mixture into the flour mixture and stir until just combined.
Pour the batter into your prepared greased loaf pans.
Bake at 350 degrees F for 55-60 minutes for large pans or 40-45 minutes for smaller pans, or until a toothpick comes out clean. This recipe makes 2 large loaves or (5) 5.75 x 3inch bread pans.
Place your bread pans on a wire rack for about 10 minutes before removing the loaves from the pans.
Cool the bread completely on the wire racks or enjoy a few slices while warm.

Instructions
- In a large bowl whisk together the pumpkin, eggs, applesauce, and oil.
- In another large bowl, mix together all of the other ingredients.
- Stir the pumpkin mixture into the flour mixture just until combined.
- Pour the mixture into greased loaf pans.
- You can either make two large loaves or five 5.75X3 inch pans. I actually made one large loaf and two smaller ones and it worked out great.
- Bake at 350 for 55-60 minutes (larger pans) or 40-45 minutes (smaller pans), or until a toothpick inserted in the center comes out clean.
- Place the pans on a wire rack for about 10 minutes before removing the loaves from pans.
- Cool completely on wire racks. Enjoy!
How long is pumpkin pudding bread good for?
After your bread has cooled, wrap it well in plastic wrap or stick it in a large Ziploc bag on the counter. It should be good for up to a few days at room temperature.
Can I freeze pumpkin bread?
Yes, this bread freezes very well. I recommend covering the bread in plastic wrap and then sticking it in a plastic baggy before freezing to help prevent freezer burn. They can last in the freezer for up to 3 months. Thaw before eating.
Best Bread Pan?
I bake a lot of bread and the pans I prefer are either ceramic, glass or cast iron. These pans will bake bread more evenly and release the bread more easily after baking. I don’t like using dark or nonstick pans because the bread cooks unevenly. It darkens on the outside before the bread is cooked on the inside, so the coloring is uneven.
