Loaded Sweet Potato Fries with Mexican flavors for a tasty dinner! Sweet Potato Fries topped with spiced chicken, beans, corn & cheese for a fun variation on fries.
I have four kids and lately life has been super hectic at our house! It’s always been important to me to have dinner together as a family and sometimes that’s a big challenge, so I’m always on the lookout for meals that come together quickly and are yummy enough for all the picky eaters at my table! These delicious loaded fries come together so easily with the use of NatureRaised Farms® Frozen Chicken and Alexia® Sweet Potato Fries. I recently discovered these products at Target and love that both products are all natural so I can feel good about what I’m feeding my kids. I’m always trying to find food products that are easy and convenient to cook with, yet are not full of lots of preservatives and ingredients that I can’t pronounce!
LOADED MEXICAN CHICKEN SWEET POTATO FRIES
- 1 package Alexia® Sweet Potato Fries
- 1 package NatureRaised Farms® Gluten Free Frozen Grilled Chicken Strips
- 1 tsp garlic salt
- 1 tsp Chipotle seasoning
- 1/2 cup diced onions
- 1 can corn, drained
- 1 can black beans, rinsed and drained
- 2 cups shredded cheese (colby jack, cheddar or Mexican blend)
Garlic Avocado Sauce
- 1 large avocado, pitted and scooped from skin
- 1/3 cup mayonnaise
- 3 cloves garlic (or 3 tsp minced garlic)
- 1/3 cup green salsa
- 1/3 cup milk
Bake the Alexia® Sweet Potato Fries according to package directions. While the fries are baking, place the chicken strips in a saucepan and add the garlic salt, Chipotle seasoning and onions. Cook over medium heat for about 5-6 minutes. You’ll also have time to make the Garlic Avocado sauce while the fries are baking. Place the avocado, mayonnaise, garlic, green salsa and milk in a blender and process until smooth. If you want the sauce to be a little thinner, you can add a little bit more milk. Once the fries are done baking, sprinkle the chicken mixture over the top of the fries and then layer the corn, black beans, and shredded cheese on top. Place the fries back in the oven at 425 for about 8-10 minutes or until cheese is melted. Serve immediately and drizzle with the sauce. A one dish meal that everyone will love!
