Where Can I find Sweetened Condensed Coconut Milk?
My entire family is dairy-sensitive and while I noticed & began buying the sweetened condensed coconut milk several years ago, it’s just started to become more popular. I can now find it at every one of my local grocery stores- Smith’s, my local Kroger store, Walmart, and even the smaller grocery stores. It’s on the baking aisle right by the regular sweetened condensed milk. The only store I’ve found that doesn’t carry it seems to be Super Target.
Cookie Preparation
In a large bowl, combine the shredded coconut, chocolate chips, almonds, salt and coconut sweetened condensed milk. Stir until combined. The mixture is thick, so a medium cookie scoop can be sprayed with nonstick spray and used to scoop out the dough onto the prepared baking sheet. It is recommended to aim for level scoops, not rounded scoops, as these cookies are rich. The tips of the fingers can be moistened with water to press the cookies more flat, pressing in pieces of coconut where needed.
Baking
Bake the cookies for 12 to 14 minutes or until the tips of the coconut are just starting to turn golden brown. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.
If you want perfectly round cookies, I like to take a round cookie cutter that’s just larger than your cookies, encircle them with it, then gently run it around the cookies a few times. Voila! Lovely round cookies!
Once cooled, these delicious Almond Joy Cookies are ready to be enjoyed! Whether you’re looking for a quick dessert or a sweet treat to share with friends and family, these cookies are sure to please.
