Easter Marshmallow Bark is an Easter dessert that everyone loves! I love that it’s made in minutes and trust me, both adults and kids love this treat. I took it to a family dinner thinking the kids would go crazy after seeing it. They did! I mean, can you blame them, it’s super cute?! I ate a piece and then pretty soon the adults joined in. YUM. It’s a simple recipe that just tastes good.
Tips for Making This Easter Bark Marshmallow Dessert
I recommend using a metal cookie cutter to make them egg shaped (that’s what I did!) But you can use other cookie cutter shapes or simply cut them into squares. Bunny or flower shaped cookie cutters would be darling.
If you follow along with my instructions on melting the white chocolate for this easy Easter no bake dessert, you shouldn’t have any issues with the chocolate seizing. Just as a precaution you can add in a small amount of shortening to the chocolate.
Add ½ tsp of melted shortening, stir, and possibly add another ½ tsp of melted shortening if it’s showing any signs of seizing. Remember to never add water to melting chocolate.
How to Melt White Chocolate to Make this Easter Dessert:
Place white chocolate in a glass or ceramic bowl. These bowls retain heat better, making it easier to melt the chocolate.
Melt chocolate in the microwave for 1 minute 30 seconds. Let it sit in the microwave, untouched, for 2 minutes.
Gently stir the chocolate. If it’s not fully melted, return it to the microwave for 15-20 seconds, letting it sit again before stirring.
My bowl of chocolate took 2 minutes in the microwave. White chocolate looks like it’s not all melted when in fact it really is. Stir it gently several times and make sure it really needs more microwave time before jumping the gun and just giving it more time. I usually have to stir mine for a good 30 seconds until it’s really fully melted.
Why Does Chocolate Seize?
Melting white chocolate can be a little frustrating if you’ve never done it before. The reason is that white chocolate seizes easily. The most common culprits are water and overcooking. I don’t EVER use water to help the chocolate melt. When chocolate seizes due to overcooking, it actually looks like it’s not melted yet, which prompts people to return it to the microwave and makes the whole thing worse. The result is a clumpy, grainy mess!
Easter Marshmallow Bark Ingredients
-1 12-oz bag white chocolate chips
-3 cups mini rainbow marshmallows
-About 1/2 TBSP shortening {optional, but it really makes the melting process easier!}
-Easter sprinkles or other fun sprinkles for decor on top!
How to Make Easter Marshmallow Bark
Measure out 3 cups of marshmallows. Line an 8×11 glass dish, or a half-sized cookie sheet {like I used!} with parchment paper.
Pour your chocolate chips into a glass or ceramic bowl and then microwave for 1 minute 30 seconds. Let it sit for 2 minutes. Gently stir the chips and then add another 15-20 seconds in the microwave if the chocolate isn’t fully melted.
Add the marshmallows and then stir to coat.
Transfer the chocolatey marshmallows to your prepared pan. Using a rubber scraper, make sure that the marshmallows extend to the edge of the pan. Press down slightly to make it is all somewhat even. Shake on any festive sprinkles you’d like to decorate the Easter marshmallows with.
Put the pan in the freezer for about 20 minutes, until the chocolate is set. You want to use the freezer so that it cools the mixture as quickly as possible- you don’t want those marshmallows to melt!
Remove the pan from the freezer and let it sit on the counter to return to room temperature. Cut the Easter Bark into pieces. If you use a cookie cutter, I suggest using a metal one and spraying the edges with cooking spray prior to cutting. This helps to prevent sticking!

Can I Use Colored Melting Chips?
Absolutely! Add Some fun colors with those Wilton melting chips (or similar brand). They are practically colored white chocolate anyways! Adding a drizzle of colored chocolate over the white would look great, but you can take away the white chocolate completely and just use a colored variety.
How Do I Store This Easter Marshmallow Dessert?
After you’ve completely cooled and cut your Easter Bark, you can keep it stored in an airtight container at room temperature or keep it stored inside of the fridge. It will last about the same length of time either way, it’s just a matter of personal preference.
If I Use a Cookie Cutter, What Do I Do With The Scraps?
Eat them of course! The chef should always get a little taste test here and there to check for product quality. I like to call it the cooking tax, take your own cut before offering the rest up. If there’s too many scraps to enjoy to yourself, you can break them up smaller and serve them as oddly shaped Easter Marshmallow Bark Pieces. It’d be perfect for those not wanting a full serving but still wanting to sample or snack on something sweet.
