It’s a super delicious and delicate slice of heaven, that’s what it is! The yogurt in the bread will help to dissolve the glutens in the mix and make your bread more tender as a result. The yogurt in the recipe provides an appealing texture will make the bread feel richer, lighter, and moister, which is why it is an added ingredient that we love. We also get the added health benefits of Greek yogurt so you can arguably weigh that this is a healthy breakfast alternative.
Yogurt and Cinnamon Bread Ingredients
-Flour: You will need 1 ½ cups of unbleached all-purpose flour for the base of this bread dough recipe.
-Cinnamon: Use 2 teaspoons of ground cinnamon so that there is a warm spice in every bite.
-Leavening agents: You will need to use a ½ teaspoon of baking soda and ½ teaspoon baking powder so that this bread rises nicely.
-Salt: Use ½ teaspoon of salt for this recipe.
-Sugar: You will need ¾ cups of granulated sugar, this will give the bread a nice sweet flavor.
-Egg: You only need 1 egg, this will help bind the dough ingredients together.
-Oil: Use ⅓ cup of olive oil or any vegetable oil, the fatty acids of the oil enhances the texture and moisture of bread.
-Yogurt: You will need 1 cup of vanilla-flavored Greek yogurt. Try to go with a whole-milk, full fat Greek yogurt option for maximized flavor results.
-Vanilla: Using 1 teaspoon of vanilla extract will boost the flavor of all the ingredients.
Step by Step on how to make Cinnamon Yogurt Bread
Prep
Preheat your oven to 325 degrees F.
Butter the inside of a 9 x 5 bread loaf pan before setting it aside. Also read this information about our favorite bread loaf pans.
Mix dry ingredients
Start by mixing together the flour, ground cinnamon, baking soda, baking powder, and salt in a medium-sized mixing bowl. Set aside.
Mix wet ingredients
In a large mixing bowl, combine the sugar, egg, and oil using a handheld electric mixer. If you do not have a handheld mixer you can also use a whisk or even a fork to mix all of these ingredients together.
Then add in the Greek yogurt and vanilla extract. Mix until completely incorporated.
Combine wet and dry ingredients
First start by adding half of the dry ingredients to the wet mixture and stir until well combined.
Then add in the remaining half of the flour mixture and continue to mix until all is fully blended. Be careful to not over mix your dough, you want your dough to be stretchy and bounce back when poked. Over mixed dough will feel tight and tough.
Time to bake
Grab your prepared loaf pan and pour the mixture into the pan.
Bake in your preheated oven for 40-45 minutes or until the edges are a nice golden color. Make sure to check with a toothpick, when inserted in the middle of the bread and it comes out clean it is done.
Let the bread cool in the pan for 2-3 minutes before transferring to a wire rack to cool completely.
Slice and serve. Enjoy!
CINNAMON YOGURT BREAD
Ingredients
- 1 ½ cups unbleached all-purpose flour
- 2 teaspoons ground cinnamon
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ¾ cup granulated sugar
- 1 egg
- ⅓ cup light olive oil any vegetable oil will work as well
- 1 cup vanilla Greek yogurt you can use regular yogurt
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 325 degrees F. Butter a loaf pan (5 x 9 inches). Set aside.
- In a medium size bowl, mix together flour, ground cinnamon, baking soda, baking powder, and salt. Mix until all combined and set aside.
- In a large bowl, combine sugar, egg and oil. Using a electric hand mixer mix until combined.
- Add in the Greek yogurt and the vanilla extract. Mix until incorporated.
- Add the dry ingredients (approximately 1/2) to the egg mixture. Mix until all combined.
- Add the remaining of the flour mixture and mix until all ingredients are all incorporated. Don’t overmix.
- Pour the mixture into the prepared pan.
- Bake in the preheated oven for 40 to 45 minutes or until the edges are nice and golden and a toothpick comes out clean when inserted in the middle.
- Cool in the pan for 2 to 3 minutes. Transfer to a cooling rack. Slice & enjoy!

How long is cinnamon bread good for?
This bread can be kept stored in an airtight container or Ziploc bag for up to a week at room temperature.
Can I freeze cinnamon bread?
Yes, you can freeze this bread. After it has cooled completely store it in an airtight container or Ziploc bag and place it in the freezer for up to 3 months. Simply thaw the bread in the fridge overnight when desired.
Alternatively, you can also slice the bread, put the bread slices on a cookie sheet lined with a silicone mat, and freeze for 30 minutes. Then transfer all the slices into a ziplock bag and take as much air out of the bag as you can. This way you can enjoy a slice or two at a time as desired instead of dedicating yourself to using a full loaf.
Can I use a muffin pan to make these instead of a bread loaf?
If you want to switch out the bread loaf pan for a muffin pan you definitely can do that. Because the time difference it takes to bake muffins versus a loaf you will want to reduce the cook time by 10-15 minutes. I would say peek in around the 25 minute mark, check the center of a muffin with a toothpick to gauge it’s doneness. Also adjust the oven temperature, drop it 10 degrees to ensure the muffins cook at a more even pace for the pan size.

This was really good. I had some slivered almonds that I needed to use, so I browned them in butter first and threw them in. Also, I only had bread flour, not all purpose, but it still had a great texture. I will definitely be making this one again.
