Did your quick bread sink in the middle?
This happens to me occasionally too! Often it’s because I’ve over mixed the batter. Quick bread (referring to a bread recipe that doesn’t use yeast) does not like to be stirred too much, so try to just barely mix all the ingredients together. Another culprit could be overfilling the pan. The bread pan should be only half full each time.
AVOID SUNKEN BREAD
The easiest and best way to avoid sunken bread is to use a cooking thermometer to check the inside of the loaf. Fully cooked bread will register 200°F on a thermometer. My all-time favorite thermometer is the Thermapen. It’s super fast and incredibly durable. Another great cooking thermometer is the ThermoPop which is a more basic version that works just as well!
How do I know when my quick bread is fully cooked in the middle?
I used to really struggle with under cooked quick bread until I learned this simple trick! Quick bread is fully cooked when the inside temperature reads 200 degrees F. So I just use a digital meat thermometer and test the temperature once I’m nearing the end of the designated cooking time, to make sure it’s fully cooked. Each oven is a little different, so it’s great to have the ability to know for sure!
Did your quick bread stick to the sides of the pan?
Baked goods stuck to the pan is the worst! I remedy this by using a non-stick spray specifically for baked goods. It contains flour along with the oil and puts a nice coating on the side of the pan. Once your bread is fully cooked, let it cool on a cooling rack for about 15 minutes, then turn the pan upside down and gently shake the bread out. Then I set the loaf of bread on the cooling rack outside of the pan and let it fully cool.
Best Bread Pan?
I bake a lot of bread and the pans I prefer are either ceramic, glass or cast iron. These pans will bake bread more evenly and release the bread more easily after baking. I don’t like using dark or nonstick pans because the bread cooks unevenly. It darkens on the outside before the bread is cooked on the inside, so the coloring is uneven. Cinnamon Swirl Pumpkin Bread
Ingredients
- 1 package Krusteaz Pumpkin Spice Quick Bread Mix
- 1/2 cup water
- 1/3 cup vegetable oil
- 2 eggs
Swirl:
- 8 oz 1 cup cream cheese, softened
- 1 egg
- 1/4 cup sugar
- 1 teaspoon vanilla
- 2 teaspoons ground cinnamon
Instructions
- Preheat oven to 350°F. Lightly grease a 9” loaf pan.
- For Cake: In medium bowl, blend together Pumpkin Spice Quick Bread Mix, water, oil and eggs. Set aside.
- For Swirl: Place cream cheese in separate bowl. Whisk cream cheese until smooth. Add egg, sugar and vanilla. Whisk again to combine. Spoon half of swirl into another small bowl, and add 2 tsp cinnamon. Stir until smooth.
- Spoon half of the bread batter into prepared pan. Spoon half of the plain cream cheese mixture and half of the cinnamon cream cheese mixture on top, swirl with a knife. Add remaining bread batter, and layer with remaining cream cheese mixtures.
- Bake 52-55 minutes or until toothpick inserted into center comes out clean.
- Cool completely. Cut into slices and serve. Store leftovers in an airtight container.
