These Cherry Brownies are my favorite easy dessert!! You start with a brownie mix and add cherries and cherry cola. Then they get topped with a luscious chocolate cherry cola frosting. You cannot get any more delicious than that! These are perfect for entertaining and are always a crowd pleaser.

Soda: Adding cherry cola soda will give these brownies amazing taste.
Cherries: You need chopped maraschino cherries for the batter, plus more for garnish.
Frosting

Cherry Cola Brownie Recipe
Ingredients
- 18.2 oz box fudge brownie mix
- 3 TBSP vegetable oil
- 2 eggs
- ½ cup cherry cola soda
- ½ cup chopped maraschino cherries plus more for garnish
Chocolate Cherry Cola Frosting
- ⅓ cup butter softened
- 2 TBSP unsweetened cocoa
- 2 ⅔ cups powdered sugar
- ¼ cup cherry cola
Instructions
- Preheat oven to 350°F. Spray a 9×13 baking dish with non-stick spray and line it with parchment paper.
- In a large bowl whisk the brownie mix, vegetable oil, eggs, soda, and chopped cherries. Transfer batter to the prepared pan & bake for 30 minutes or until a toothpick inserted comes out clean. Set aside to cool.
- To make the frosting: In a medium bowl using an electric mixer beat the butter, cocoa powder, and powdered sugar until combined. Beat in the cherry cola fully incorporated.
- Frost the cooled brownies and garnish with additional cherries. Slice, serve, & enjoy!

HOW DO YOU SOFTEN BUTTER?
I like to soften butter by using the defrost function on my microwave. If you need the full 1/2 cup cube of butter, you can leave it in the paper wrapper, otherwise, place the amount of butter you need in a glass or porcelain bowl. I use the lowest defrost setting on my microwave and just let it run for 20 seconds. Check the butter and see how soft it is by pressing it with a rubber scraper. If it is still not soft to the touch, meaning it doesn’t indent when you press into it, let it warm for another 5-10 seconds. Watch it closely! Butter softens very quickly.

What’s the best way to incorporate cherries into brownies?
Chop the maraschino cherries finely before folding them gently into the batter. This helps distribute the cherries evenly and prevents excess moisture from altering the texture.
Can you use a different kind of cola in brownie recipes?
