No-bake apple pie éclair cake is not your typical cake, but it is just as delicious. This éclair cake contains no eggs, the pudding is the main structure of the cake. The graham cracker layers provide stability and helps create the cake construction. From the simple apple pie filling with warm spices, to the fluffy pudding filling, and the crunchy graham crackers, this cake is simply heavenly. The prep work is minimal, but some patience is required during the chilling process. But the wait time is worth it, once you taste this incredibly creamy cake you won’t be disappointed!

- It tastes amazing. While this cake not a traditional cake, it is packed with amazing flavors. The soft fluffy texture of the filling pairs perfectly with crunchy graham crackers.
Caramel Apple Éclair Cake Ingredients
Pie filling: For the amazing taste in this cake, use one 30-oz can of Apple pie filling.
Cinnamon: Adding in 1 tsp of cinnamon will give this cake a nice warm spiced flavor.
Nutmeg: To give this no-bake cake even more amazing taste, use ¼ tsp of nutmeg.
Graham crackers: You will need 1 box of cinnamon graham crackers to help stabilize this incredible cake.
Pudding: Use 6.8-oz of vanilla pudding for the base of the cake filling (this is two 3.4 oz boxes).
Milk: To make the pudding filling a nice consistency, add in 2 cups of milk.
Powder sugar: Help create a nice sweet filling by adding in ½ cup of powdered sugar.
Heavy cream: Use 2 cups of heavy whipping cream to make the filling wonderfully rich, creamy and delightful.
Vanilla extract: You will need 1 tsp of vanilla extract to enhance all the great flavors in this cake recipe.
Caramel sauce: For the cake topping, you need 1 jar of store bought hot caramel topping (I used Smucker’s).
How to make No-Bake Caramel Apple Cake
Prep
Place the apple pie filling into a bowl, then use scissors to cut the pieces of apple into smaller chunks.
Next, add the cinnamon and nutmeg to the apple pie filling, stir and set aside.
Cake filling
In a separate bowl whisk together the vanilla pudding, milk and powdered sugar.
Then add the heavy whipping cream and vanilla extract. Use an electric hand mixer to whisk together (about 3-4 minutes), until fully combined.
Assembly
Now, in a 9×13 pan, place one layer of cinnamon graham crackers at the bottom. Proceed to spoon half of the apple pie filling over the graham crackers.
After that, spread half of the vanilla pudding mixture over the apple pie filling.
Then repeat a layer of graham crackers, then apple pie filling, another layer of vanilla pudding, and top with a layer of graham crackers.
Lastly, heat the hot caramel topping up in the microwave so you can pour it over the top. Continue to carefully pour the caramel topping on top and smooth it out.
Chill
Place the cake into the fridge to chill for at least 4-6 hours, over night is best.
When you are ready to serve, slice and enjoy!

How do I store this cake?
This cake needs to be stored in the refrigerator to stay chilled. Cover it in plastic wrap to keep it fresh and it should last for 3-4 days. The cake will loose its original texture the more time that goes by, it is best when eaten in the first 2 days.
What are some substitutions I can make?
If you want, you can swap out heavy whipping cream for cool whip to make the filling light and fluffy. Or, if you are not a huge fan of caramel sauce, you can use chocolate sauce instead.
What is another variation I can make?
If you want to change the flavor in an extreme way, you can use a different fruit for the pie filling. We have not tried another fruit flavor, but feel free to and let me know how it turns out in the comments below! You can use cherry or blueberry pie filling instead of apple. You can also change up the vanilla pudding for another flavor if you’d like to as well.
