Best Quiche recipe made with spinach, sausage, mushrooms and three kinds of cheese! Easy quiche recipe that is delicious!
I love quiche. Made with eggs, cheese and your favorite add-ins, this versatile dish is typically served for breakfast but we eat it for dinner all the time. You can leave out some of the veggies, add some more or swap them out to fit your preferences. I love sausage in this quiche, but it is also delicious with ham or you can leave the meal out altogether.
What is quiche?
Quiche is basically a breakfast pie! And who doesn’t love pie, right? You use a regular pie crust as the base, and then fill it with a mixture of eggs, cheese, cream and veggies and meat. This particular quiche recipe calls for Italian sausage, onion, garlic, mushrooms and spinach that are mixed with mozzarella, provolone and ricotta cheese.
Ingredients in Best Quiche recipe
Pie shells: The recipe makes enough to fill two deep-dish 9″ pie shells. You can find these in the refrigerator or freezer section. If you don’t get the deep dish ones, the regular ones may not be deep enough and the filling will probably overflow a little bit.
Italian sausage: I prefer to use mild Italian sausage, but you can use a spicier sausage if you’d like.
Onion: I usually use white or red onion and I usually cheat by using frozen chopped onions. I always keep some on hand to avoid having to chop onions as often as I can.
Garlic: Minced garlic works best. I always keep minced garlic in my refrigerator to save time.
Mushrooms: You’ll need about 2 cups of sliced mushrooms. You can dice them if you prefer smaller pieces.
Spinach: The recipe calls for frozen spinach. You will use one 10-ounce package. Make sure to thaw the spinach and then squeeze out the extra moisture before adding to the quiche.
Eggs: You will need 3 large eggs.
Mozzarella: You’ll need 2 cups of shredded mozzarella, but you can swap that out with Gruyere or cheddar.
Provolone: You’ll need 1 cup of shredded provolone. It’s hard to find shredded provolone, so you can just tear some slices into small pieces.
Ricotta cheese: The recipe calls for 3/4 cup of ricotta cheese. I really like the ricotta in the recipe, but you can swap it out with cottage cheese and that works great too.
Flour: Just two tablespoons of flour will help to thicken up the quiche and provide the best consistency.
Pepper: Just a little shake of pepper will help to intensify the flavors.
Half and half: 1 cup of half and half cream will provide a rich creaminess to the quiche. You can use milk instead, but the consistency will be a little different.
How to make Best Quiche recipe
Preheat oven to 400°. Lightly prick bottom of pie shells all over and then bake for 5 minutes. Remove and cool while preparing the filling. Reduce heat to 350°.
In large skillet, cook the sausage for about 5 minutes over medium heat, stirring often. Add the onion, garlic and mushrooms and cook another 5 minutes. Add spinach, cook 1 minute. Remove to bowl and cool for 10 minutes.
In a large bowl, beat eggs and then stir in the 3 cheeses, cream, flour and pepper. Combine the egg mixture with the sausage mixture and divide between the 2 pie shells. Bake for 30 minutes, or until center is set. Let stand for about 5 minutes before serving.

Can I substitute fresh spinach for frozen?
The recipe calls for frozen spinach, but you can absolutely use fresh spinach instead. I would probably use about 2-3 cups of fresh spinach.
What kinds of cheese are in quiche?
This quiche recipe calls for mozzarella, provolone and ricotta cheese. Any or all of these can be swapped out with a different kind if you prefer. Gruyere cheese is an amazing substitute for the mozzarella or provolone, and you could even add in some cheddar if you’d like. I sometimes swap out the ricotta cheese with cottage cheese and it works great!
Can you freeze quiche?
Yes, you can freeze quiche. It works best to freeze the quiche after it has been baked. Bake and then cool completely before wrapping well with plastic wrap and then foil and freeze for up to a month. Thaw and slice and then reheat the quiche slices.
