Pancake Bites are the perfect breakfast for busy weekday mornings! I used the Krusteaz Buttermilk Protein Pancake mix, these tasty bites come together easily and everyone loves this sweet, poppable breakfast.
Ingredients for Pancake Bites
Pancake mix: Start with 1 cup of pancake mix, which provides structure and the base texture. I used the Krusteaz Protein mix, this adds a boost of protein we are looking for.
Milk: Add ⅔ cup of milk to hydrate the mix and create a smooth batter.
Egg: Include 1 egg for binding ingredients together and adding moisture. The egg also helps the bites rise slightly during baking.
Berries: Mix in 1 cup of fresh berries—blueberries, raspberries, and strawberries—to add natural sweetness and moisture, plus a boost of flavor.
Toppings: For toppings, use powdered sugar, syrup, or jam to enhance sweetness once baked. These toppings don’t affect the bite’s texture but add a finishing touch of flavor.

How to make the best pancake bites
Pancakes are pretty easy to make, but there are a couple things you can do to make them even better.
First, do not over mix! Pancake batter should be whisked just to combine the ingredients. There’s no need to use an electric mixer of any sort, you can mix pancakes just fine by hand.
Second, after your pancake batter is mixed, let it sit for 5-10 minutes. This helps activate the leavening ingredients and helps yield fluffy pancakes! For this recipe, you can pour the batter in the pan, then let it sit before baking them pancakes.

Storing and Reheating Breakfast Bites
Store your pancake bites in an airtight container in the fridge for up to 4 days.
For longer storage, freeze in a sealed bag or container and they should last up to 3 months. Thaw overnight or reheat from frozen.
Reheat in a toaster oven or conventional oven at 300°F (149°C) for 5–7 minutes to maintain crisp edges.
Microwaving works too but might soften the texture. Use microwave reheating for convenience, but oven reheating preserves fluffiness.

Berry Protein Pancake Bites Recipe
Ingredients
- 1 cup Krusteaz Buttermilk Protein Pancake Mix
- ⅔ cup milk
- 1 egg
- 1 cup fresh berries rinsed and diced
- powdered sugar, jam, and/ or syrup, for topping/dipping
Instructions
- Heat the oven to 350°F and lightly grease a mini muffin pan.
- In a medium bowl, whisk pancake mix, milk, and egg. The batter will be slightly lumpy. Now spoon 1 heaping tablespoon of batter into each well in mini muffin pan.
- Top the pancake batter with 3-4 berries, adding a variety to each.
- Cook pancake bites for 12-14 minutes, until lightly browned. Cool in pan for 5 minutes. Remove and sprinkle with powdered sugar. Dip bites in warm jam or syrup. Serve & enjoy!

How can I easily scoop out the batter for the muffins?
A medium cookie/ ice cream scoop with a lever works perfectly for measuring out mini sized muffins like these! The medium scoop measures about 1.5 tablespoons of batter in each cup.
What kinds of fruit can you put in pancake bites?
You can add a variety of fruit to pancakes with fantastic results! Berries are always a good idea. I used a combination of blueberries, raspberries and diced strawberries in my berry protein pancake bites, but you’re welcome to stick with just one or two. I also think these would be delicious with small bits of banana or raisins in them.

How can I prevent my muffins from sticking to the pan?
To help keep your muffins from sticking to the pan, I suggest doing one of two things. First, you can use mini muffin liners for this recipe. Seconds, you can spray your muffin tin with non-stick spray that includes flour. This spray is specifically for baked goods and works so well! I never have my baked muffins stick to the pan again!
What type of pancake mix works best for berry protein pancake bites?
Use a high-protein pancake mix for added nutrition and structure. Plain or flavored mixes both work, but consider your preference for sweetness and added ingredients.
Can I use frozen berries for these pancake bites?
You can use frozen berries without thawing, but expect slightly longer baking times. Frozen berries may release extra moisture, so check doneness by lightly browning and firm texture before removing from the oven.
