ROOT BEER CAKE
Root Beer Cake is made with eggs, sugar, flour, and a few other basic ingredients. Most of the liquid for the cake comes from a can of root beer! Once the cake is baked and cooled, a simple root beer buttercream frosting is spread on top. There is so much root beer flavor in this simple dessert!

The Root Beer Cake is a delicious dessert that is perfect for any occasion. Here are a few serving suggestions that can help you enjoy this cake to the fullest:
- Serve the cake with a dollop of whipped cream or a scoop of vanilla ice cream. It will taste just like a root beer float!
- Sprinkle some powdered sugar over the cake before serving to add a touch of sweetness and a beautiful snowy finish.

Ingredients in Root Beer Cake
Sugar – You can’t make a cake without sugar, right?!
Butter – The butter for the batter should be melted and cooled for a few minutes before adding to the other ingredients. For best results, use real butter.
Vanilla extract – The higher the quality of the vanilla, the better.
Eggs – Two large eggs will bind all of the other ingredients together.
Flour – All-purpose flour works great, but you can use cake flour.
Baking powder – This is the leavening agent in the cake. Make sure your baking powder isn’t old or expired for best results.
Salt – Just a teaspoon of salt will help all of the other flavors to pop.
Root beer – This is the star ingredient in the cake. You can use any brand of root beer that you’d like, but use regular soda, not diet. If you want to try a different flavor of soda, go ahead and give it a try. I’ve tried lots of flavors of soda and they are all delicious!
ROOT BEER FROSTING
Powdered sugar – Powdered sugar serves as the base for the frosting. It makes the frosting sweet and smooth.
Butter – Soften the butter to room temperature before adding to the other frosting ingredients. For best results, use real butter.
Vanilla extract – Again, the higher the quality of the vanilla, the better.
Root beer – You will need 6 tablespoons (1/3 cup) of root beer to provide the liquid for the frosting. You can use a little less or a little more to get the consistency you are looking for.
How to make Root Beer Cake
Preheat oven to 375°.
MAKE THE CAKE
Combine all ingredients in a large bowl. Beat at medium speed for about 3 minutes.
Pour batter into a greased and floured 8X12 or 9X13 pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool while you make the frosting.
MAKE THE FROSTING
In a deep bowl, cream the softened butter with a hand mixer til light and fluffy.
Add powdered sugar a little bit at a time, alternating with vanilla and root beer, until mixed.
Once the cake is cooled, spread frosting on top. Slice and serve or store in the refrigerator until ready to serve.

HOW DO YOU SOFTEN BUTTER TO ROOM TEMPERATURE?
The best way to soften butter is to set it out for a few hours before you make the frosting. Since most of us (or maybe just me!) aren’t that prepared or don’t think that far in advance, there are a few tricks to softening butter perfectly in just a matter of minutes.
My favorite way to soften butter is in the microwave. It’s definitely fast, but you do have to be very careful not to melt it. Just put the whole stick of butter in the microwave (as long as it isn’t wrapped in foil!) and microwave for about 6-7 seconds. If the butter is still really cold, try another 5-7 seconds and check it again. You may need a few intervals, and if the butter is starting to feel soft, you can shorten the final interval to just a few seconds to make sure it doesn’t start melting.
STORAGE AND PRESERVATION FOR ROOT BEER CAKE
Root Beer Cake can be stored in an airtight container in the refrigerator for up to 5 days. For longer storage, it can be frozen for up to 3 months. You will get better results if you freeze the cake without the frosting. Once the cake is thawed, make the frosting and add to the top of the cake. It is important to let the cake cool completely before storing it to prevent condensation from forming and making the cake soggy.
