Fall is my favorite season. Part of why I love it so much is baking wonderful cookies like these- where the spicy scent of cinnamon lingers after the cookies are done. The smell of these treats baking is almost as enjoyable as eating them.
What are butterscotch apple cookies?
These butterscotch apple cookies are simply amazing. With butterscotch chips, grated apple, and chopped nuts in the cookie dough batter you get a flavorful treat, but the glaze on top- WOW! It’s made with melted butterscotch chips, powdered sugar and apple juice, giving you a cookie that tastes incredible in every bite.
Butterscotch Apple Cookies Ingredients
-Flour: Using all purpose flour we can create the cookie dough base.
-Ground Cinnamon: A flavorful seasoning/spice that will help to bring in a nutty aroma and fall feeling.
-Baking soda: This is a leavening agent that will allow the cookies to puff up nicely while they’re baking so that they’re pillows of awesomeness.
-Salt: Just a little salt added to the dough will help to bring out the flavors of other ingredients and make the dough feel well-rounded and complete.
-Brown Sugar: We want to use packed measuring cups of brown sugar because it helps to give us the chewy and sweet cookie appearance and taste that we’re looking for.
-Butter: A stick of unsalted and softened butter will allow us to create the dough consistency and give us rich cookies. We also need a little in the glaze on top too- Yum!
-Egg: We only need one egg for this recipe, but it’s a great binder to hold the dough and cookies together so that it doesn’t crumble.
-Apple Juice: Apple juice goes in the cookie dough and in the glaze giving us an easy way to get that apple flavor.
-Butterscotch Chips: We’ll need an entire 11oz bag of butterscotch chips for this recipe but it will be divided between the cookie dough and the glaze for the top of the cookies.
-Grated Apple: One small apple is all we really need. Just grate it into thin pieces, measure it out, and toss it in. An easy and delicious way to get real apple in your cookies.
-Chopped Nuts: You can use chopped pecans or chopped walnuts, both work really great in this recipe, but of course you can also omit them if you’d like this recipe to remain nut free.
-Confectioners Sugar: Also known as powdered sugar, this sweet white sugar goes in the cookie glaze and gives us a smooth and creamy glaze that will have us licking the spoon clean.
How to Make Butterscotch Apple Cookies
Preheat your oven to 350 degrees F. Lightly grease some cookie sheets or line them with parchment paper. Set aside.
In a medium sized bowl, mix together the flour, cinnamon, baking soda, and salt.
In a large bowl, beat together the brown sugar and the ½ cup of butter until they’re nice and creamy.
Beat in the egg, gradually beat in the flour mixture, alternating each addition with the apple juice.
Stir in 1 ½ cups of butterscotch chips, the grated apple and ½ a cup of chopped nuts.
Drop the cookies by the tablespoons onto the prepared cookie sheets.
Stir in 1 1/2 cups butterscotch chips, apple and 1/2 cup nuts. Drop by slightly rounded tablespoon onto lightly greased cookie sheets.
Bake in the oven for 10-12 minutes until they’re lightly browned. Let the cookies stand for 2 minutes and then transfer them to cooling racks to continue cooling.
While the cookies cool, make the butterscotch glaze.
Melt the remaining butterscotch chips and butter in a small saucepan on the stove over the lowest heat possible.
When the butter and chips have melted, remove the pan from the heat and stir in 1 cup of confectioners sugar and 1-2 tablespoons of apple juice until the glaze is smooth.
Spread the glaze onto the cooled cookies and then sprinkle them with remaining nuts.
Let the cookies set and then serve.

- 2 1/2 cups all-purpose flour
- 2 tsp ground cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 11/3 cups packed brown sugar
- 1/2 cup butter, softened
- 1 large egg
- 1/2 cup apple juice
- 1 2/3 cup butterscotch chips (11oz bag, divided)
- 3/4 cup unpeeled grated apple (1 small apple)
- 3/4 cup chopped pecans or walnuts, divided
Glaze
- 1-2 tbsp apple juice
- 3 tbsp butter
- 1 cup confectioners' sugar
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets or line with parchment paper.
- Mix together flour, cinnamon, baking soda and salt in medium bowl.
- Beat brown sugar and 1/2 cup butter in large mixer bowl until creamy. Beat in egg.
- Gradually beat in flour mixture alternately with apple juice.
- Stir in 1 1/2 cups butterscotch chips, apple and 1/2 cup nuts.
- Drop by slightly rounded tablespoon onto lightly greased cookie sheets.
- Bake for 10 to 12 minutes, until lightly browned. Let stand 2 minutes; cool on wire racks.
How to Make Glaze
- Make the glaze while the cookies cool.
- Melt remaining butterscotch chips and 3 tablespoons butter in small, heavy saucepan over lowest possible heat.
- When the butter and chips have melted remove the pan from heat and stir in 1 cup confectioners' sugar and 1-2 tablespoon apple juice until the glaze is smooth.
- Spread the glaze on the cooled cookies and sprinkle with remaining nuts.

How long are butterscotch apple cookies good for?
These cookies are good for up to a few days when stored at room temperature in an airtight container. Eating them fresh is always best!
Can I freeze cookies with fresh apple?
Yes you can freeze these cookies. I recommend letting the completely set first and then either flash freezing them on a baking sheet before storing in an airtight container. You can also choose to lay them in a plastic container with some parchment or wax paper between each layer to prevent sticking.
What type of apple should I use?
This is completely up to you as only you know what you want to enjoy. A sweet apple is always nice, but adding a little tart apple in the cookies such as Pink Lady or Granny Smith is a great way to bring more flavors to the table. I recommend using any type of baking apple as they’ll hold up better in the dough.
