GARDEN VEGETABLE CAPRESE SALAD

I found some incredible heirloom tomatoes at my local Farmer’s Market one day and to be honest, I planned this entire recipe around that tomato. It was perfectly ripe and juicy- yum! This salad is a variation on the traditional Caprese Salad- because I love vegetables and wanted to add more. So I did. And it was amazing! One of the best things about this salad is that it stores well. It might actually even be better the 2nd day, when the vegetables and fresh mozzarella have had a chance to absorb the deliciousness of the vinaigrette. Try it- you’ll love it.

Garden Vegetable Caprese Salad

  • 1 large tomato, sliced into 1/2″ chunks
  • 1-2 cups grape tomatoes
  • about 1 cup diced bell pepper {mine were large- I used 1/2 of the green and 1/2 of the orange}
  • 1 cucumber, diced
  • 2 TBSP diced red onion
  • about 1/2 cup diced fresh mozzarella chunks
  • 1/4 cup minced fresh basil
  • vinaigrette {you’re welcome to use your favorite – I included the recipe for my favorite below}

Wash all produce. Dice/ chop/ mince to your heart’s content. Toss salad together with vinaigrette and serve.

Red Wine Vinaigrette

  • 1/2 cup olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/2 tsp sugar
  • 2/3 cup red wine vinegar

Combine dressing ingredients in a jar and shake well to mix.

I chopped most of my vegetables with the Wavy Knife from Crisp Cooking because I love how it looks!

The knife is easy to use and it just adds a fun flair to your chopped veggies.

I also used the Lettuce Knife here for my super-ripe heirloom tomato. It was soft and the Lettuce Knife works well with soft produce. The knife is a little thick, so if you’re trying to slice smaller pieces of tomato, I’d use the Serrated Paring Knife, but since I wanted chunks, the Lettuce Knife worked perfectly.

The Herb Mincer is an all-time favorite. I opted to leave my basil in larger pieces, so it took, oh about 10 seconds to mince the entire portion.

I cut the fresh mozzarella up with the Straight Paring Knife. I didn’t show it here, but this knife has a case that has a built-in knife sharpener. It’s so easy to sharpen this knife so you know, that means I actually do it. I absolutely LOVE having a sharp knife at my disposal!

  1. I am in veggie salad love! I have been trying to eat more vegetables lately, and honestly, I don’t like a lot of vegetables, but if I left out the peppers, I could eat this every single day! Pinning and sharing over at FB and G+!
