Cinnamon– Using 1 teaspoon of cinnamon will give the sweet potatoes a delicious warmth of spice.
Allspice– Add in ⅛ teaspoon of allspice (one pinch) to bring the dish together nicely.
Topping
Flour– You will need ¼ cup of all-purpose flour to give the topping the perfect consistency.

How to make Pineapple Sweet Potato Casserole
Prep
Preheat your oven to 350 degrees F. Then spray the inside of a 2-quart casserole dish with nonstick cooking spray and set it aside.

Sweet potato casserole
In a large mixing bowl, combine the mashed sweet potatoes, salt, butter, brown sugar, eggs, heavy cream, cinnamon and allspice. Stir well to combine all the ingredients together.
Then, transfer the mixture to the prepared casserole dish and set it aside.
Pineapple topping
In a large mixing bowl, stir together the flour and sugar until well mixed. Then, add in the butter and the egg, and then stir again. Next, fold in the drained, crushed pineapple.
Proceed to spoon the pineapple topping over the sweet potato mixture in the casserole dish.
Bake
Place the casserole dish into the preheated oven and bake for 30 minutes.
Remove the baking dish from the oven, sprinkle the top of the casserole with mini marshmallows, and then return the pan to the oven and bake until the marshmallows are lightly toasted. This should be about 5 minutes or so. Serve and enjoy!
Can You Use Less Sugar?
If you prefer side dishes less sweet, you can cut the brown sugar in both the sweet potatoes and the topping in half! So you’d just use 1/4 cup in each, for a 1/2 cup total in the casserole. I love sweet potatoes, so using less sugar lets their flavor shine through more!

Can I use Canned Sweet Potatoes?
Yes, one 29-oz can will yield about 2 cups of mashed sweet potatoes. Canned potatoes are awesome since they’re SO easy to use! No cooking is needed, just drain and mash.
Are yams and sweet potatoes the same thing?
Nope. Yams are usually harder to find in grocery stores and feature a white interior, while sweet potatoes are much easier to find in stores and are filled with orange color inside. You can use the two interchangeably though, so whichever one you have on hand or can find in stores (or in your garden) is fine to use in this recipe.
How do you know when sweet potato casserole is done?
The casserole will be finished baking when everything is nicely warmed through and looking toasty. The marshmallows are added at the end and are given a few minutes in the oven to soften, melt, and become a toasted color. Once the marshmallows are to the color you want, the casserole is finished.
