GOOEY BUTTER CAKE

I’ve had this recipe on my list forever now and I finally got around to trying it. HOLY HANNAH why didn’t someone tell me it was so good?!?! I took one bite and ran around my house shoving forkfuls in random family member’s faces yelling, “You’ve GOT to try this!!” It was awesome. Apparently it’s a southern thing (makes sense with all the butter!) and it’s an atrocity that I’ve gone 30+ years without it. I love how simple it is to make- scroll down and watch the video to see how easy it comes together.

Gooey Butter Cake - Butter With A Side of BreadGooey Butter Cake

  • 1 box yellow cake mix (16.5 oz)
  • 1 egg
  • ½ cup (1 stick) butter, melted
  • 8 oz cream cheese, softened
  • 2 eggs
  • 4 cups (1 lb) powdered sugar
Preheat oven to 325 degrees F and generously coat a 9×13-inch dish with nonstick cooking spray.
Mix cake mix, melted butter and one egg to a soft dough. Press into the bottom of the pan.
Mix powdered sugar, softened cream cheese and two eggs until smooth, about 1-2 mins. Pour on top of crust.
Bake at 325 degrees F for 40-45 minutes until top is a light golden brown. (Cake should seem a little soft & gooey in the center, hence the name!)
Cut into squares and EAT THE WHOLE PAN YOURSELF.

  1. In southern Kentucky we call this Chess Cake. Yes, it's delicious! My husband's favorite cake. He fusses when I make it for a potluck 'cause he knows he isn't going to get the whole thing!
    • I need to move to the south! LOL! This cake is amazing. Have you tried variations on it? Maybe a different cake mix? Just wondering how versatile it is... ;)
