Cheddar Bay Biscuit Pot Pie made with tender chicken & veggies in a buttery cream sauce topped with iconic Cheddar Bay Biscuits!

This hearty dinner is a flavorful twist on traditional chicken pot pie. Instead of topping your pie with pie crust, we used Cheddar Bay Biscuits, from a mix, made popular by Red Lobster restaurants. Pick up a box of mix at the grocery store and put this meal on your dinner menu!
Biscuit Topped Chicken Pot Pie Ingredients
Filling Ingredients:
Butter: Use ½ cup salted butter for rich flavor.
Veggies: Adding 1 cup each diced carrots and diced celery provide a classic base. You can substitute or add peas or green beans for variety.
Thickening agents: You need ½ cup all-purpose flour and 2 TBSP cornstarch to create a smooth, glossy sauce. If avoiding cornstarch, increase flour slightly, but expect a different texture.
Seasonings: ½ tsp each of salt and ground black pepper enhance the flavors in this dish well.
Broth: 2 cups chicken broth adds depth and savory flavor to the filling.
Chicken: Use 3 cups shredded rotisserie chicken. Using a precooked rotisserie chicken really cuts down on your prep time.
Heavy cream: Adding 1 cup heavy cream makes the pot pie filling richer, creamier, and adds a smooth, luxurious texture to the sauce.
Biscuit Ingredients:
Butter: You’ll need ½ cup salted butter, melted, to make the biscuits soft and flavorful.
Box mix: Use one 11-oz box of cheddar bay biscuit mix + the provided seasoning packet.
Milk: Moisten the biscuits by adding ¾ cup whole milk to the dough.
Cheese: These biscuits aren’t complete without ½ cup cheddar cheese!

Tips for making Cheddar Biscuit Chicken Pot Pie Casserole
Full instructions are in the recipe card below, but here are a few tips for making the process easier.
- Mixing the biscuits: The box of cheddar bay biscuit mix will tell you to whisk together the butter and seasoning packet and then brush it over your biscuits, but we like to just mix everything together. This gives you a softer biscuit that has more flavor.
- Extra vegetable add-ins: In addition to carrots and celery you can add diced onion or chopped kale to your pot pie. When it comes to the onion, use a white onion for a sharper flavor and a yellow onion for a sweeter flavor.
- Give it time to cool down: Letting your pot pie cool down before you serve it will help the filling set up a little bit. It will continue to thicken as it cools. If you serve it straight from the oven then it will have a runnier consistency.

How long is this Biscuit Chicken Pot Pie good for?
Store your leftover pot pie in an airtight container, in the fridge for up to 5 days.
To reheat, cover loosely with foil and warm in a 350°F oven for 15-20 minutes or until heated through. This preserves biscuit texture better than the microwave. You can however reheat a bowl of leftovers in the microwave for 1-1 ½ minutes, stirring halfway through.

Cheddar Bay Biscuit Chicken Pot Pie Recipe
Ingredients
Filling Ingredients:
- ½ cup salted butter
- 1 cup diced carrots
- 1 cup diced celery
- ½ cup all-purpose flour
- 2 TBSP cornstarch
- ½ tsp salt
- ½ tsp ground black pepper
- 2 cups chicken broth
- 3 cups shredded rotisserie chicken
- 1 cup heavy cream
Biscuit Topping Ingredients:
- ½ cup salted butter melted
- 11 oz box cheddar bay biscuit mix + seasoning packet
- ¾ cup whole milk
- ½ cup cheddar cheese
Instructions
- Preheat your oven to 425°F.
- Melt ½ cup butter in a 10-12 inch cast iron skillet or oven safe pot over medium-high heat. Once the butter is completely melted, add your veggies, the sprinkle with flour, cornstarch, salt, and pepper. Cook the veggies over medium heat for 5-7 minutes, or until soft.
- Once your veggies are soft, add the chicken broth, rotisserie chicken, and heavy cream. Stir to combine and reduce heat to low and let the mixture simmer while you prepare your biscuit dough.
- Whisk together the melted butter, biscuit mix, seasoning packet, milk and cheese together in a mixing bowl until uniform. The biscuit dough should be thick and free of any dry clumps.
- Spoon the biscuit dough over the pot pie filling. Wet fingers lightly and pat biscuits gently to round out the tops. Cook pot pie for 25 minutes, or until the tops of the biscuits begin to brown.
- Let the pot pie cool down on the stovetop for 15-20 minutes before serving. Enjoy!

Can I substitute cream of chicken soup for heavy cream in this biscuit-topped chicken pot pie?
Yes, you can use cream of chicken soup instead of heavy cream. It will add creaminess and flavor but may make the filling thicker and less rich.
If you substitute, consider adding a little chicken broth to loosen the mixture so it doesn’t become too dense. Adjust seasoning as needed since some soups are salted.
