Ingredients for Carrot Cake Poke Cake
Cake mix: You need one 13.25-oz box of carrot cake mix + the oil, egg, etc. that’s called for on the box.
Milk: Use 3 cups of cold milk to create the cake filling.
Pudding mix: Add two 3.4-oz boxes of instant cheesecake pudding mix for a flavorful filling.
Cream cheese frosting
Butter: ½ cup of butter, softened, adds a rich taste to this homemade frosting.
Cream cheese: The base of this frosting is one 8-oz package of cream cheese, softened.
Powder sugar: You need 4 cups of powdered sugar to sweeten the topping perfectly.
Food coloring: Use orange and green food coloring to create the carrots and stems for the cake decoration.
Step by step on how to make a Carrot Poke Cake
Prep
Bake the boxed cake in a 9×13 pan according to the package directions. Let the cake cool after baking before beginning the next steps.
Once the cake has cooled fully, use the end of a wooden spoon to poke holes across the entire surface of the cake about ½” apart.

Filling & frosting
In a medium mixing bowl whisk the milk with the cheesecake pudding mix until smooth and combined. Fill the holes in the cake with the mixture and spread the rest across the top.
Then in a separate large bowl, use an electric mixer to combine the butter and cream cheese. Once blended add in the powdered sugar, a cup at a time.
Set aside about ¼ cup of the frosting in one small bowl and 2 tablespoons of the frosting in another separate small bowl. Dye the ¼ cup frosting orange and the 2 tablespoons green. Place the orange frosting in a small ziplock bag and the green frosting in a small ziplock bag, snip a small corner off each bag.

Frost the cake with the remaining white cream cheese frosting. Then pipe orange carrots all over the cake and add some green stems to each as well.
Chill
Cover the cake pan and place it in the refrigerator for 4 hours, or overnight, to chill and set. Once chilled, slice, serve, & enjoy!
