Baked Chicken Taquitos are full of chicken, cheese and lots of salsa and spices to give this delicious homemade taquito recipe tons of flavor. This easy dinner recipe is easy to make and everyone in the family loves it when it’s on the menu!
Baked Chicken Taquitos are so much more delicious than the frozen taquitos (although my kids love that kind too)! Often when I make this recipe, I double it and place the extras in a freezer bag after they have been cooked. That way we can just grab a couple and heat them up for a quick and easy snack or meal later.
My kids are pretty picky, but they absolutely love these taquitos and I love that they are full of protein. Plus, they are so easy to make. They come together with just a few minutes of prep and then they only have to bake for about 15 minutes.
Ingredients in Baked Chicken Taquitos
Cream Cheese
The cream cheese is easier to mix when it is softened to room temperature. Cream cheese can be brought to room temperature by setting it on the counter for about 30-60 minutes before using. If you don’t plan in advance (like me), you can soften the cream cheese by removing from the foil and then placing the microwave for about 20-30 seconds, until soft.
You can use regular cream cheese, or you can use low-fat or non-fat cream cheese. All work well in this recipe.
Salsa
The original recipe calls for green salsa and that’s what I usually use, but you can use whatever kind of salsa you want!
Spices
Now it’s time to add some flavor! The recipe calls for cumin, chili powder, onion powder and garlic powder. You can definitely add more chili powder for a little bit more kick, or you can leave it out if you want a more mild flavor. We don’t really like spicy foods, but the small amount of chili powder in the recipe doesn’t add very much spice and adds quite a bit of flavor.
Chicken
You’ll need 2-3 cups of shredded and cooked chicken for this recipe. I like to use a rotisserie chicken because I love the texture and flavor, but you can use any type of cooked chicken. Click here to see our favorite way of cooking and shredding chicken -using the crockpot!
Cheese
You’ll need 2 cups of shredded cheese for the recipe. I usually use a Colby/Pepperjack blend, but I’ve used plain cheddar many times and it’s wonderful too! You can use whatever kind of cheese you want, and you can definitely add a little bit extra if you want those taquitos to be even cheesier!
Tortillas
I use about twenty 6-inch flour tortillas for this recipe. You can use larger ones, but then you’ll have fewer taquitos and I think they bake more evenly when they are smaller.
How to make homemade taquitos
Place the softened cream cheese in a large bowl. Add the green salsa, cumin, chili powder, onion powder and garlic powder and stir until well combined. Add the chicken and the cheese and mix well.
Place about 3 Tbsp of the mixture on the bottom half of the tortilla and then roll up tightly. Place the seam side down on a greased baking sheet. Make sure that the taquitos are not touching each other on the baking sheet. Lightly spray the tops with cooking spray and sprinkle a little bit of salt on top. This makes the tortilla crispier and the salt adds a little bit of flavor too!
Bake at 425° for about 15 minutes, until crispy and golden brown on the ends. Dip in salsa, guacamole and/or sour cream.
BAKED CHICKEN TAQUITOS
Ingredients
- 8 oz cream cheese can use regular or low-fat
- 1 cup green salsa
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp onion powder
- 1 tsp garlic powder
- 2-3 cups shredded cooked chicken (I used a rotisserie chicken)
- 2 cups shredded cheese I used a Colby/Pepperjack blend
- 20 6-inch flour tortillas
Instructions
- Heat cream cheese in the microwave for about 30 seconds until soft.
- Add the green salsa, cumin, chili powder, onion powder and garlic powder and stir until well combined. Add the chicken and the cheese and mix well.
- Place about 3 Tbsp of the mixture on the bottom half of the tortilla and then roll up tightly. Place the seam side down on a greased baking sheet. Make sure that the taquitos are not touching each other on the baking sheet. Lightly spray the tops with cooking spray and sprinkle a little bit of salt on top. Bake at 425 for about 15 minutes, until crispy and golden brown on the ends.
- Dip in salsa and/or sour cream. Enjoy!
What do you serve with taquitos?
Taquitos work as a snack, but I like to serve them as the main dish at dinner time. Add a couple of easy sides for an easy, well-balanced meal. Taquitos pair well with Spanish Rice, refried beans, fresh fruit, fruit salad, a green salad or corn.
Can you freeze homemade taquitos?
Homemade taquitos are easy to freeze. Once the taquitos have been baked and completely cooled, place them in a freezer bag and freeze up to a month. To keep them more fresh, you can wrap each one individually in plastic wrap or foil before placing in the freezer bag, but if you know you’ll be eating them within a week or two, there is no need for the extra step.
When you are ready to eat one, just place it in the microwave for 1-2 minutes, until heated all the way through.
