CREAMY BAKED TORTELLINI

Creamy Baked Tortellini -Butter With a Side of Bread

During the summer, we tend to have very simple meals since we are so busy and it is way too hot to even think about turning on the oven most days!  Now that fall is quickly approaching, I’m excited to start cooking real meals again!  I have four kids that are all kinda picky, but pasta is generally one thing that all of them will eat so I’m constantly coming up with ways to make spaghetti a little more exciting for the grown-ups in the house!  I recently discovered Mezzetta pasta sauces and love how they taste like they are homemade! I especially love that they use high quality ingredients and don’t add any sugar. I used the Mezzetta Napa Valley Homemade Marinara pasta sauce in this simple recipe that is one of our favorites!

CREAMY BAKED TORTELLINI

Cook the tortellini according to package instructions, making sure not to overcook the pasta. Once the pasta is strained and rinsed, set aside.  Whisk the pasta sauce and cream cheese together until well combined.  Add the tortellini to the sauce mixture, stirring gently until the noodles are covered with the sauce and then pour into a greased 8X8 pan (I used a 2 1/2 qt. casserole dish).  Sprinkle the parmesan cheese over the pasta and then place the slices of mozzarella cheese on top.  Bake at 350 for about 30 minutes.  If you want the cheese lightly browned, broil on low for about 3-5 minutes after it is done baking.  Enjoy!
