During the summer, I like to keep our meals light, fresh and easy to make. I feel like I’m always running from one activity to the next, packing up kids and lunches and anything else we need. It’s so convenient to have fresh food available and ready in the fridge. I recently found these Ready Pac Bistro Salads at Costco and was so thrilled to incorporate them into our weekly meals. I purchased a 4-pack of ready-made salads, then added in this delicious flatbread to serve alongside. We all loved the Chef salad variety- the ham and turkey tossed with crisp lettuce and swiss cheese was perfect to serve with the warm flatbread.

The salads were the perfect lunch for my husband to take to work as well! (They include dressing and a fork- so handy!) There are so many varieties of these Ready Pac Bistro Salads, it was difficult narrowing down my choice! What’s your favorite type of salad?

This simple recipe for flatbread is easy to make and is a favorite of mine. Use a tomato from your garden if you can- the flavor is heavenly!

Tomato Parmesan Flatbread

  • 1 cup warm water
  • 2 tsp sugar
  • 2 1/4 tsp (1 packet) yeast
  • 1/2 tsp salt
  • 2 tsp minced garlic
  • 4 TBSP olive oil, divided
  • 2 1/4 cups flour
  • 1 tsp onion powder
  • 1/3 cup grated Parmesan cheese
  • 1 medium tomato
  • fresh basil, to garnish if desired

Combine warm water and sugar in a mixing bowl. Stir a few times, until sugar dissolves. Sprinkle yeast over the top and let sit for about 5 minutes, until yeast looks frothy and is bubbling. Add in salt, minced garlic, 2 TBSP olive oil and onion powder. Mix until combined. Add in flour. Continue mixing with a dough hook (or kneading by hand) and additional 5 minutes. Cover let sit in a warm place until nearly double in size, about 30-45 minutes.

While you’re waiting for the dough to rise, slice tomato thin and set on paper towels to absorb a lot of the moisture.

Preheat oven to 375 degrees F.

Cover a baking sheet with parchment paper. Transfer dough to baking sheet. Dough will be sticky- put a little olive oil on your hands, then gently spread dough out a bit, until it’s a rounded 12″ oval. Drizzle remaining 2 TBSP olive oil on top of dough. Sprinkle about half the cheese, then arrange tomato slices on dough. Sprinkle with remaining cheese.

Bake at 375 for 30-35 minutes, until the cheese on top of the flatbread is beginning to brown. Let cool and slice to serve. Top with thin slices of fresh basil if you’d like. (I adore fresh basil, so I take every opportunity to use it!)

TOMATO PARMESAN FLATBREAD

    • HA! Oh my heavens, it’s Monday, isn’t it. I fixed the ingredients list. Yep- 2 1/4 cups of flour. That looks better, doesn’t it?? 🙂 THANK YOU!
